White Chocolate Blueberry Cheesecake 🍰🫐
Ingredients:
- 1 cup sugar
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
- 8 oz white chocolate, melted and slightly cooled
- 4 packages (8 oz each) cream cheese, softened
- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar (for crust)
- 1/3 cup melted butter
- 4 large eggs
- 1 1/2 cups fresh blueberries
- 1/2 cup blueberry jam
- Whipped cream (for topping)
- Fresh blueberries (for garnish)
- Mint leaves (for garnish)
Directions:
1. Prepare the crust: Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan. In a medium bowl, combine the graham cracker crumbs, 1/4 cup of sugar, and melted butter until well mixed. Press this mixture firmly into the bottom of the prepared pan to form the crust.
2. Make the cheesecake filling: In a large mixing bowl, beat the softened cream cheese and 1 cup of sugar together until the mixture is smooth and creamy. Add the vanilla extract and blend well. Add the eggs one by one, ensuring each is fully mixed in before adding the next. Gradually stir in the melted white chocolate and sour cream just until combined. Carefully fold in the fresh blueberries to distribute them evenly in the batter.
3. Bake: Pour the cheesecake batter over the prepared crust, smoothing the top with a spatula. Bake in the preheated oven for 55 to 60 minutes or until the center is almost set but still slightly jiggly. Once baked, take it out and cool it on a wire rack for 10 minutes. Run a knife around the edges of the cheesecake to loosen it, then let it cool for an additional hour. After this, refrigerate the cheesecake overnight to let it set completely.
4. Add toppings: Before serving, spread a layer of blueberry jam evenly on top of the cheesecake. Garnish with whipped cream, fresh blueberries, and mint leaves to create an elegant presentation.
