We are so excited to be a Kentucky Proud shared kitchen, working with the food entrepreneurs under our roof to use Kentucky’s agricultural foods and products which supports our farm families. HOW DO I EAT IT? A story of Ramps, Kale & Goat Cheese

Today was spent at the 8th Annual Kentucky Local Food Systems Summit pre-conference workshops...where the connections made and lessons learned were PRICELESS!

So many things learned with statewide FCS agents and the afternoon in the test kitchen with The Farmer and the Foodie (Check them out on KET) locally grown kale, ramps, cabbage, goat cheese, and flour...honestly...our Goat Cheese Gnocchi with Kale Pesto and Ramp butter knocked it out of the park! Learned some knife skills too!

Cannot wait to share some of the bigger lessons with our friends and family at 525 Kitchen!

Goat Cheese Gnocchi
Cook time: 50 minutes
Serves: 2 as an entree

INGREDIENTS:

6oz Sirocco Ridge Big Softy Goat Cheese, at room temperature
½ cup all purpose flour + extra for dusting
1 egg
¼ cup grated Sirocco Ridge manchego-style goat cheese (or parmesan cheese)
2 tbs olive oil
lemon juice, Maldon salt, and additional grated manchego-style goat cheese for garnish

Earth Day at 525 Kitchen looks a lot like real life: using a little less, reusing a little more, and getting very excited about herbs growing where we can. We believe good food and good stewardship go hand in hand, and even small changes in the kitchen can grow into something meaningful.
