Thank you to everyone who stopped by today and supported the bakery. You guys absolutely cleaned me out!

Now it’s back to cheesecake next week. And because apparently I enjoy making my life harder… I’m TRIPLING production so hopefully everyone can actually get a slice. 🍰

I must give a shout-out to the people who really help make all of this possible and ease the burden when my baking insanity gets a little out of hand.

Cory — thank you for continually fulfilling my Costco requests for ungodly amounts of cream cheese and plastic containers. I’m grateful that you are so willing to help a brother out.

RHK Farm — thank you for selling me large quantities of some of the most beautiful eggs around. They make a difference, and I’m grateful to have such a great local source.

To the handful of people who graciously offered me freezer space this week while I decided to embark on these crazy shenanigans: THANK YOU. Seriously. You have no idea how much that helped.

And finally, my wonderful wife. ❤️ Thank you for supporting me, putting up with my insanity, and somehow continuing to encourage me while watching me bake a ridiculous number of delicious cheesecakes that you don’t even get to eat.

There are a lot of moving parts behind the scenes that most people never see. I couldn’t do all of this without the people who help make it possible.

If the Huskers score 24 points or more, you already know what happens. 👀

If they don’t hit 24, those frozen cheesecake slices are going to be $5.

At this point, I’ve either made a brilliant business decision or completely screwed myself.

🔥 BASQUE CHEESECAKE 🔥

If you’ve never had a Basque cheesecake, let me introduce you to your new problem.

This isn’t your traditional cheesecake. It’s baked hot enough to give the top that deep, caramelized, almost burnt-looking crust while the inside stays ridiculously creamy and custardy.

No fancy toppings. No crust needed. No hiding behind a bunch of stuff.

Just cream cheese, eggs, sugar, cream, and a whole lot of flavor.

That dark top? That’s the point.

It looks like I accidentally burned a cheesecake.

I absolutely did not.

I intentionally burned it.

And somehow, that might be the best part.

Basque Cheesecake.
Ugly on the outside. Beautiful on the inside.
Basically the cheesecake version of me.

🥜🍌 CARAMELIZED PEANUT BUTTER BANANA CHEESECAKE 🍌🥜

A rich, creamy peanut butter cheesecake topped with sweet, caramelized bananas and homemade sauce drizzled over the top.

The peanut butter gives you that salty, nutty richness. The caramelized bananas bring the sweetness. Then that homemade sauce ties the whole thing together.

It’s basically peanut butter banana sandwich’s much more sophisticated cousin.

🥕 CARROT CAKE CHEESECAKE 🥕

You ever eat carrot cake and think, “You know what this needs? Cheesecake.”

Well, I apparently did.

This beauty is carrot cake swirled with rich cream cheese cheesecake, topped with a layer of homemade cream cheese frosting and finished with crushed pecans.

So you get the warm, spiced goodness of carrot cake, the creamy richness of cheesecake, that tangy-sweet cream cheese frosting, and a little crunch from the pecans.

Basically… carrot cake grew up, got its life together, and became a cheesecake.

And yes, I made every bit of it from scratch. 🥕🍰

If you like carrot cake, you need this one. If you don’t like carrot cake… honestly, I’m still willing to bet this could change your mind.
