🎃 She’s back! 🎃

After a long rest, our Savoury Pumpkin Sourdough has returned. It’s only here for the fall, and once it’s gone, it’s gone until next year.

Most pumpkin bakes go sweet. We went our own way and made a savoury masterpiece instead. And yes, it’s even shaped like a pumpkin. 🧡

What’s inside:

Bread flour, fresh-milled grains (our Mrs. R blend), water, organic pumpkin, salt, fresh cracked pepper, sage, sautéed shallots and extra virgin olive oil.

🌱 Vegan

🌾 Contains wheat

Perfect alongside a bowl of soup, toasted with a drizzle of good olive oil, or as the star of your fall table.

Available for the Fall season on our Wednesday preorder bake and at the Fulshear Farmers' Market Saturday’s

This Week’s Featured Grain: Einkorn

(Triticum monococcum)

Each week, one of our sourdough pan loaves stars a different specialty grain, and this week it’s one of the oldest of them all: einkorn. Here are a few tasty tidbits about why we’re so smitten with it.

A GRAIN WITH A STORY

• Einkorn grew wild in the Fertile Crescent long before anyone planted it, and was first cultivated over 12,000 years ago.

• It was part of the last meal of Ötzi the Iceman.

• It has never been hybridized, making it one of the oldest, purest foods still around today.

WHY WE LOVE BAKING WITH IT

• A lush, nutty flavour, a silky texture and a beautiful golden-yellow colour.

• High in protein (13–15%).

• Richer than modern wheat in carotenoids, essential fatty acids, phosphorus, B vitamins and trace minerals.

• It doesn’t carry the D genome found in modern wheat, and its gluten structure is weaker, which many people find easier to digest. (Einkorn does still contain gluten, so it isn’t suitable for anyone with celiac disease.)

WHERE OURS COMES FROM

• We source our einkorn from jovial Foods in Tuscany, Italy, where it’s grown organically and tested for glyphosate.

• You’ll find it in our whole grain einkorn loaves, einkorn blends and pan loaves, all naturally leavened sourdough, of course.

KNOWN BY MANY NAMES

• French: petit épeautre

• English: little spelt

• Italian: piccolo farro

• Spanish: escanda menor

HELLO OCTOBER… PUMPKIN 🎃 IS BACK, BABY!

We made it through September, folks! Here’s hoping October brings cooler weather and less time on Hades’ front porch. The hummingbirds are heading south (a few stragglers still visit my feeders), and my jungle of a garden is getting a good fall trim.

SEPTEMBER’S BAKES

Saffron & Wild Rice Sourdough made its debut.
Black Garlic, British Cheddar & Thyme is back for the cooler months.
Our NEW Caramelised Onion, Sage & Cheddar Scones arrived (what did you think?), and Danish Rugbrød and Raisin Rugbrød returned after a summer-long hiatus.

COMING THIS FALL

Seasonal classics, YES some pumpkin, and a few spooky treats. Some flavours vanish until next year, so snag an extra for the freezer.

Behind the scenes at Mrs. R HQ this morning ☕✨

Herbal tea in hand, laptop open, notes spread across the table… we’re doing some serious roll-out planning for the rest of the year! 🤯🥳

There’s a little website magic happening, a few new ideas scribbled in the margins (I spy focaccia 👀), and plenty of happy chaos in between. Part baker, part chaos, 100% me!

I can’t spill all the crumbs just yet, but trust me, y’all, good things are rising. 🍞💛

A little update from Mrs. R’s kitchen 🍞✨

We won’t be baking this week, so there’s no Wednesday preorder bake (Oct 7th) and no Saturday (Oct 10)market bake. Mrs. R needs just a bit more time.

But keep your eyes peeled 👀 If all goes well, we’ll have a small run of sourdough for Friday pickup, run just like our Wednesday extras list. We’ll post at 7:15 am on Friday. It’s first come, first served, and all you need to do is comment!

We’re easing back into our regular baking shenanigans:

🥖 Preorder menu goes live Thursday, October 8 at 7 am for our Wednesday, October 14 bake. It’ll be a limited bake with a smaller selection and quantities, so don’t wait!

🌾 If all goes well, we’ll be back at the Fulshear Farmers' Market on Saturday, October 17.

We’re so excited to be back and getting our hands in the dough again. Thank you so very much for your patience and support. We couldn’t ask for better customers than you folks. 💛

While we are taking a bit of a break… let’s spill some flour. 👀🌾

We thought we’d share a few fun facts, behind-the-scenes tidbits, and little things you might not know about Mrs. R’s Sourdough Kitchen.

First up… why ingredients REALLY matter. 🍞

🌿 Ingredients Matter… Always Have, Always Will 🌿

If there’s one thing I’ll never compromise on in this little flour-dusted kitchen of mine…

…it’s the ingredients.

Because behind every beautiful loaf, every golden focaccia, every buttery bite… is a choice.

And around here, we choose quality. Every single time.

🌾 Flour & Grains

Organic, thoughtfully sourced, and milled fresh in-house, because real bread starts with real grain. Nothing stripped away, nothing rushed.

🧀 Cheese

Only the good stuff. Properly aged, full of flavor, and worth every single bite (and yes… imported because nothing local compares 😉).

🫒 Olive Oil

First cold-pressed, rich, and full-bodied, because when it hits a hot pan of focaccia… oh my word.

🌿 Herbs & Spices

Layered with intention. From garden-fresh when in season to carefully selected blends that bring every bake to life.

🥕 Local Produce (when we can get our hands on it!)

Because supporting local farmers and using ingredients at their peak just makes everything better.

🍅 And even our sauces…

Our spaghetti sauce starts with imported San Marzano

(from 🇮🇹)tomatoes, slow-simmered with love and fresh herbs from our garden when the Texas sun is doing its thing 🌞

No shortcuts. No fillers. No “that’ll do.”

Just honest ingredients, treated with care, and turned into something truly special.

Because I believe you can taste the difference… and more importantly, I believe you deserve it.
