High Protein, Low Calorie Pepperoni Pizza

One third the calories of a takeout pizza with zero sacrifices on flavor. A crispy Greek yogurt crust topped with melty mozzarella, parmesan, and turkey pepperoni that you could have every single night and stay on track. Makes 8 slices at 100 calories and 8g of protein each!

Dough:
100g Flour
1.5 tspns baking powder
1 tspn salt
Dash of Garlic powder and basil
120g plain 2% Greek yogurt
15g light butter (optional)
5g nutritional yeast (optional)

Toppings:
120g of Tomato Sauce
40g 2% Mozzarella
40g fat free mozzarella
10g parmigiano reggiano
20 Turkey pepperonis
Optional: ~20g Hot Honey

STREET CORN PASTA 🌽

BIG BATCH Pasta, Episode 6

Per serving (makes 10)

I truly expected this recipe to be a total fail, but it ended up being one of my favorite pasta recipes I’ve ever made. The Ditalini perfectly matches the size of the corn kernels and the flavors integrate so well. Genuinely a 10/10

STREET CORN
900g (32oz) frozen corn
180g (1.5 cups) Cotija
120g (1/2 cup) FAGE 0% Greek yogurt
75g (1/3 cup) light sour cream
6 cloves garlic, minced
Handful of cilantro, chopped
Juice & zest of 2 limes
1 Tbsp chili powder
1 Tbsp Tajín
1 tsp smoked paprika
1 tsp onion powder

CHICKEN
1150g (40oz) chicken breast, pounded thin
15g (1 Tbsp) oil
Salt, black pepper, garlic powder & chili powder (add enough of each to coat chicken)

PASTA
680g (24oz) ditalini
900g (32oz) chicken bone broth
354g (12oz can) fat free evaporated milk
Garlic powder & salt, to taste

FINISHING
180g (3/4 cup) FAGE 0% Greek yogurt
80g (2/3 cup) Cotija, finely grated
Fresh cilantro, chopped
Tajín, to taste
Pinch of salt

1.) Spread frozen corn on a sheet pan and broil 3-5 minutes until lightly charred. Mix with remaining street corn ingredients, cover & refrigerate.

2.) Coat chicken with oil, add seasonings, and add to the same sheet pan that you cooked the corn on. Bake at 375°F for about 30 minutes, then finely chop.

3.) Bring bone broth to a boil. Add ditalini and evaporated milk, reduce to medium-low and simmer ~20 minutes, stirring frequently, until pasta is cooked and thickened. It is more important to stir frequently in the final 10 minutes to prevent sticking

4.) Stir in chicken, Greek yogurt, Tajín & cilantro. Remove from heat, fold in street corn and Cotija, then rest a few minutes before serving.

Divide into 10 servings, place in Macro Stackers containers for freezer storage, and enjoy!

Can’t believe I had never tried this before

Street corn + Ditalini = perfect match

This is one of my favorite pasta dishes I have ever made. Truly thought it was going to be a total fail but it blew me away

Butter Chicken

Set the slow cooker, walk away, and come back to a butter chicken that tastes like it came straight out of a restaurant kitchen. The easiest seven meals you'll ever make. Makes 7 servings at 460 calories and 38g of protein each!

Per Serving (Rice Bowls):
460 Calories

50g Carbs
11g Fat

Per Serving (Butter Chicken only):
260 Calories
34g Protein
7g Carbs
11g Fat

Ingredients:
30g butter
2 onions, chopped
2 tablespoons tomato paste
2 tablespoons garlic paste
2 tablespoons ginger paste
2 tablespoons paprika
1 tsp cayenne
2 tablespoons garam masala
1 tsp cumin
1 tsp coriander
2 tsp salt
Dash of black pepper

One 14 oz can of crushed fire roasted tomatoes
1/2 cup (120ml) water

Optional (add when blending)
1 tablespoon chicken bouillon
1 tablespoon sugar or zero calorie sweetener

32oz chicken breast, diced

High: 2-3 hours
Low: 3-4 hours

250g plain nonfat greek yogurt or skyr
30g butter

For rice bowls:
420g basmati rice
~630ml water
Cook and evenly distribute across 7 servings

Feel free to adjust ratio of butter chicken to rice, or serve with fresh naan if you prefer 🤝

Macro-Friendly Honey Chipotle Steak Bowls

Skirt steak marinated in adobo and chipotle, served over golden roasted potatoes with a creamy honey chipotle sauce. Simple ingredients, big flavors, five meals handled. Makes 5 bowls at 490 calories and 40g of protein each!

Per bowl (makes 5):
490 Calories
40g Protein
49g Carbs
15g Fat

Chipotle Steak:
24oz skirt steak (trimmed lean)
3 tablespoons adobo sauce
1 tsp avocado oil
1 tablespoon coarse salt (divide in half if using fine grain salt)
1 tsp tajin
1 tsp garlic powder
1 tsp oregano
1 tsp black pepper
0.5 tsp cumin

Roasted Potatoes:
1300g diced russet potatoes (~5 small potatoes)
1 tablespoon avocado oil
SEASON TO TASTE (I used the following seasonings, but use any seasoning you like)
- KINDER CARNE ASADA SEASONING
- SIMPLY ORGANIC UMAMI BLENDS SWEET & SMOKY
- ITALIAN SEASONING
- SALT

Honey Chipotle Sauce:
250g 0% Greek yogurt
3 chipotle peppers
1 tablespoon adobo sauce
1 tsp hot sauce
1 tsp garlic
2 tsp honey
Handful of cilantro stems
Salt & pepper to taste
~1 tablespoon milk (or until desired consistency)

Divide in to 5 equal portions, and enjoy!

PROTEIN PIZZAS ARE COMING!! 🍕🍕

Yesterday we had our first production run - and pumped out our first 75,000 frozen protein pizzas

These will be available NATIONWIDE in Target, beginning of October!!

We spent an extremely long time making a protein pizza that felt as close to an authentic pizza as possible

Most protein pizzas have a crusts that don’t eat like a real pizza (they may look like pizzas, but once you eat them….. they’re exposed)

We created an authentic, hand stretched, 24hr ferment pizza dough - with minor alterations to add a bump of protein without sacrificing texture or crunch. Instead of maxing out protein in the crust, we focused more on building protein into the toppings in order to hit our 30g Protein target

The crust itself adds a flavor complexity and texture that beats out many pizzas I’ve had at restaurants, and blows away any “healthy” pizza I’ve ever tried

It is truly our most innovative product by a wide margin

We spent years working on these in the background - it was actually one of the first things we ever tried to develop back in early 2022 before we had any products on shelves (and yes… I’m ashamed to say our first iteration was a high protein cauliflower crust 😭)

I had heavy doubts we’d ever be able to make a pizza that passed our quality standards, and would rather never launch a pizza vs launch one that is mediocre

Like all of our meals, I wanted a pizza that competed with normal, top tier restaurant pizzas - not one that competed with other protein pizzas

Beginning of this year, we finally pulled it off

Each pizza is a “personal pizza” and will be sold directly next to our frozen meals. Each one is 390 cals or less, and 30g of Protein. Unheard of for a pizza of this quality

Korean BBQ Beef

Soy, gochujang, mirin, and oyster sauce slow-cooked into tender shredded skirt steak, served over rice with a spicy yogurt cream sauce that brings the whole bowl together. Korean BBQ flavors at home, for a fraction of the price, ten meals at a time. Makes 10 bowls at 505 calories and 36g of protein each!

Per Rice Bowl (makes 10)

Korean BBQ Beef (per 4oz, makes 12)
295 Calories
30g Protein
12g Carbs
14g Fat

Ingredients:
48oz skirt steak, exterior fat trimmed lean
5 tbsp soy sauce
3 tbsp gochujang
3 tbsp mirin
2 tbsp honey
2 tbsp garlic purée
1 tbsp ginger purée
Black pepper, to taste

4 tbsp oyster sauce*
2 tbsp toasted sesame oil*

*Add after cooking/after shredding beef for best flavor. I added in at the beginning on accident, and it still tasted delicious, but generally better to add these at the end

Also, oyster sauces generally aren’t created equal - I recommend Lee K*m Kee brand or Lucky Brand (a vegan option). It should taste very umami & salty with deep caramelized sweetness (it shouldn’t taste fishy or bitter)

Low: ~6 hours
Or
High: ~4 hours

Spicy cream sauce:
200g nonfat skyr or greek yogurt
2 tbsp gochujang
2 tsps chili crisp
Add 40ml milk or until desired constituency
Salt & pepper to taste

600g Rice (uncooked weight)

Garnish with sesame seeds and green onions

Spaghetti & Smashed Meatballs

BIG BATCH Pasta 🍝
Episode 5

Per serving* (makes 10):
665 Calories
50g Protein
80g Carbs
15g Fat

Meatballs
1360g (48oz) 93% lean ground beef
40g (1/3 cup) Parmigiano Reggiano, grated
5g (1 Tbsp) nutritional yeast
30g (2 Tbsp) olive oil
1 1/2 Tbsp coarse salt
1 Tbsp Italian seasoning
1 Tbsp garlic powder
1 tsp black pepper
1/2 tsp baking soda

Tomato Sauce
30g (2 Tbsp) olive oil, divided
300g (2 medium) sweet onions, diced
20 cloves garlic, minced or grated
170g (1 small can) tomato paste
1600g (56oz) crushed San Marzano tomatoes
900g (32oz) beef bone broth

Pasta
900g (32oz) spaghetti
600g (2 1/2 cups) water
Salt to taste
Italian seasoning to taste
Fresh basil, chopped

Instructions
1.) Add all meatball ingredients to a bowl and mix thoroughly. Form into large meatballs and place on a sheet pan (I formed into 14 XL meatballs). Place to side.

2.) For the sauce, heat 1 Tbsp oil in a large pot and cook onions until browned. Add another 1 Tbsp oil, minced garlic & tomato paste; cook 3–4 minutes. Add crushed tomatoes, bone broth & water and bring to a simmer.

3.) Bake meatballs at 400°F for 10 minutes, then broil on high for 7 minutes. Pour any rendered juices into the sauce. Smash meatballs flat with a spatula or spoon, then broil another ~7 minutes until deeply browned with crispy edges.

4.) Add spaghetti directly to the simmering sauce (break in half if needed to fit), along with salt & Italian seasoning. Simmer uncovered, stirring frequently, until pasta is tender and the sauce reduces, about 20–30 minutes.

5.) Add smashed meatballs and mix thoroughly so the beef breaks up and integrates with the pasta. Continue simmering to desired thickness. Finish with basil.

Divide into 10 servings, top with Parmigiano Reggiano, and enjoy!

Frozen Cheesy Buffalo Chicken Burritos

One slow cooker batch, two ways to enjoy it - serve it as buffalo chicken dip or wrap it up and stack your freezer with 14 high protein burritos. Makes 14 burritos at 450 calories and 37g of protein each!

Per Burrito (Makes 14)

This one also doubles as the best slow cooker buffalo chicken dip you’ll ever make. Macros are ridiculous too 👇

Entire Batch of Buffalo Chicken Dip:
3600 Calories
432g Protein
103g Carbs
171g Fat

Ingredients:

48oz Boneless Skinless Chicken Thighs
Salt, garlic, onion, paprika, chili powder (~1 tsp each)
1 packet ranch seasoning
1 tablespoon fresh chopped dill
100g Buffalo sauce

High: 2-3 Hours
OR
Low: 3-4 Hours

750g blended cottage cheese
200g 1/3 fat cream cheese
200g Buffalo sauce
200g 2% cheddar cheese
60g Honey
30g butter
Handful of chopped chives

14 burrito tortillas

Reheat instructions:
Option 1: Microwave for 3-4 minutes, flip halfway
Option 2: Microwave for 2 minutes, this will defrost the burrito but not heat it all the way through. Add to oven or air fryer at 400 degrees until tortilla begins to brown and is slightly crispy, 6-10 minutes (will be faster in air fryer)

Additional Notes:
- Place entire batch of buffalo chicken dip/filling in fridge or freezer until thickened, usually this takes 45-60 mins. If your chicken happens to carry more water than mine, I’d recommend removing the excess liquid after cooking (reserve it on the side) and add back in to create desired consistency. This will prevent the filling from being too thin to roll.
- Weigh the entirety of your filling and divide by 14 to evenly distribute filling across each burrito

These will stay good in the freezer for 3+ months!
