I’ve made my share of cracked pumpkin rolls over the years! One thing I’ve learned is how much the timing of that first roll matters.

Roll the cake while it’s still hot, with the parchment inside, then let it cool completely before adding the cream cheese filling. That little step helps the cake hold its shape without cracking.

If you’ve been hesitant to try a homemade pumpkin roll, I’ll walk you through it!

Homemade Apple C***r Donuts, baked right in your own kitchen!

After a family outing in North Carolina, I started thinking about making those familiar fall apple c***r donuts at home. This recipe brings that fall flavor into your kitchen with real apple c***r, warm spices, and a generous cinnamon sugar coating.

One step I wouldn't skip? Reducing the apple c***r before adding it to the batter. It concentrates the apple flavor so it can hold its own alongside the cinnamon, nutmeg, cloves, and allspice.

These donuts are baked rather than fried, then brushed with melted butter and rolled in cinnamon sugar while they're still warm.

If homemade apple c***r donuts are on your fall baking list, I've got the recipe for you!

Apple fritters are one of my favorite fall treats, but frying at home? Not my favorite kitchen project. 🍎

That's why I love this Apple Fritter Bread. Tender apples, cinnamon, and a brown sugar swirl, all baked into a soft homemade loaf. No pot of oil required!

It's a lovely one to make ahead for breakfast or share over coffee.

I’ll say it: I like these better than traditional cake pops.

These red velvet cake pucks have the same soft cake-and-frosting center, but there are no sticks to fuss with. I make mine in silicone molds, and I prefer the molded shell when I want those cleaner edges.

They’re such a fun little treat to make and share.

Fall is here and I am SO ready 🍂

First apple crisp of the season is in the oven.

Cinnamon-spiced apples, buttery oat crumble, and no pie crust to fuss with. This is exactly the kind of fall baking I’ve been waiting for.

What goes on yours: ice cream or whipped cream?

I’m firmly in the camp that a blueberry muffin should actually have blueberries in almost every bite.

These use 2½ cups, plus plain yogurt for a tender crumb, and the batter takes about 10 minutes. No mixer. Fresh or frozen berries both work.

One tip before you start: once the flour goes in, stop mixing while the batter still looks a little lumpy. That’s what you want.

Bread flour isn't just for bread. It's one of the reasons these chocolate chip cookies bake up so thick and chewy.

A few years ago, my husband and I took a trip to New York City and planned part of our day around a stop at Levain Bakery. Those enormous cookies sent me home wanting to figure out how to make that thick, soft-centered style in my own kitchen.

Bread flour became an important part of the answer. Its higher protein content gives the dough more structure, which helps these cookies stay tall and gives them that good chewy bite.

I also start with cold butter, use big scoops of dough, and pull the cookies from the oven while the centers still look slightly underdone. They'll finish setting on the hot pan.

Homemade bread for dinner, even if you didn’t start yesterday. ❤️

This Stecca bread is a same-day, no-knead bread with no overnight rise. Give the dough time to rise while life keeps moving around you.

My family loves, loves, loves this bread. Usually the whole loaf is gone in one sitting.

Real kitchen. Busy afternoon. Put the bread on the table anyway.

Baking with kids doesn’t mean they have to help with every step.

If you’re making sugar cookies together, give each child one job that fits their age.

Maybe they press the cookie cutters into the dough. Maybe they help move the cutouts to the baking sheet. Later, they can take over the sprinkles.

That one job gives them something they can really do, and it keeps the recipe manageable for you, too.

There may be flour on the counter. A few cookies may come out a little crooked. That’s all welcome here.

They’re learning how to use their hands in the kitchen, one small skill at a time.

If you’re baking with kids this fall, here’s my reminder: one real job is enough.

What baking job do your kids always want to do?
