Tonight Lou had Broccoli Salmon circles!
Ingredients: Around 6 ounces of wild caught salmon (pre-baked or canned if you wish), around 12 ounces of organic broccoli, two eggs, and the seasonings of your choice. Majority of the recipes I create are very flexible when it comes to measurement, so measure with your heart, not your eyes!
[It is important to try to get "Wild caught" salmon due to the higher amounts of calcium and iron! The organic broccoli was just pre boiled broccoli I had made Lou from another night - I normally use the pack of organic frozen broccoli from publix and boil it on the stove with around a 1/2 cup of water]
After mashing it all together with a fork, I simply spoon it into little circles onto a pan on the the stove with some avocado oil and cook on medium for around 3-4 minutes on each side (you're just ensuring the eggs are cooked).
This one is super simple and very brain health forward!
The eggs offer many brain-boosting nutrients such as Choline, Vitamin B12, and Protein.
The wild caught salmon offers Zinc, Iron, Choline, Iodine, and Omega 3 fats.
The broccoli offers brain-healthy antioxidants like Vitamin C and Flavonoids.
This recipe made around 10 salmon circles and she ate 3 tonight and I decided to freeze the rest for a very easy and fast dinner for other nights to come!
