Buttery Pecan Snowball Cookies
**Ingredients:**
- 1 cup (2 sticks) unsalted butter, softened
- 1/2 cup powdered sugar, plus extra for coating
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 cup finely chopped pecans
**Directions:**
1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
2. In a large mixing bowl, cream together the softened butter, powdered sugar, and vanilla extract until light and fluffy.
3. Gradually add the flour to the mixture, mixing just until combined. Stir in the chopped pecans.
4. Roll the dough into 1-inch balls and place them on the prepared baking sheets about 1 inch apart.
5. Bake for 10-12 minutes or until the bottoms are lightly golden. Do not overbake.
6. Remove from the oven and allow the cookies to cool for 5 minutes on the baking sheets.
7. While the cookies are still warm, roll them generously in powdered sugar to coat completely. Place on a wire rack to cool fully, then roll them in powdered sugar once more for a second coat.
