It’s another Souper Sunday! 👰‍♀️🤵‍♂️Today I chose to make Italian Wedding Soup. It was so good on this cold New England Sunday. ☃️
Servings: 6

Yield: 9 cups

Ingredients
2 tablespoons olive oil
1 ⅓ cups chopped onion
⅔ cup chopped carrot
⅔ cup chopped celery
2 tablespoons minced garlic
6 cups chicken broth
6 ounces orzo, ditalini, or other small pasta
1 ½ tsp dried oregano
½ tsp salt
4 cups spinach
¼ cup grated Parmesan cheese
20-24 small chicken meatballs (recipe below)

Directions

Heat 2 tablespoons oil in a large pot over medium-high heat. Add onion, carrot, celery and garlic; cook, stirring occasionally, until the onion is translucent, 4 to 5 minutes.

Add broth, cover and bring to a boil. Add pasta, oregano and salt; cover and cook, stirring occasionally, until the pasta is just tender, about 9 minutes.

Stir in meatballs and spinach; cook until the meatballs are heated through and the spinach is wilted, 2 to 4 minutes.

Serve sprinkled with cheese.

Chicken Meatballs

¾ cup breadcrumbs
¼ cup milk
1 large egg, lightly beaten
⅓ cup finely grated Parmesan cheese
1 Tbs dried parsley
2 cloves garlic, minced
½ teaspoon ground pepper
1 Italian chicken sausage link, casing removed (mild or spicy)
12 ounces ground chicken
Directions

Position a rack in the oven 8 inches from the heat source; preheat broiler to high. Lightly coat a rimmed baking sheet with cooking spray.

Combine breadcrumbs and milk in a medium bowl; let stand for 10 minutes.

Stir egg, cheese, parsley, garlic and pepper into the breadcrumb mixture. Break sausage into small pieces. Add the sausage and chicken to the breadcrumb mixture, gently mixing until just combined.

Form the mixture into 24 meatballs, about 1 tablespoon each. Arrange the meatballs on the prepared baking sheet. Broil until an instant-read thermometer inserted in the center of a meatball registers 165 degrees F, 9 to 10 minutes.

🌰🥜🥥Want a guilt free granola? Try this! 1 1/2 cups chopped nuts of your choice, 1 1/2 cups oatmeal, 1/2 cups unsweetened coconut flakes, 3 Tbs coconut oil, 3 Tbs honey, 2 tsp vanilla or almond extract. Mix honey, coconut oil and extract and warm over a medium heat just until melted and combined. Mix all ingredients together and place on a rimmed baking sheet. Cook for 1 hour and 15 minutes at 250 degrees. Cool completely and crumble to desired consistency. Serve with yogurt or can be eaten alone.

Carrots are inexpensive and very good for you.☺️This soup is made of carrots, chicken stock, fresh thyme and onions. Cook it all together, add a little cream and blend it all together until it is smooth and creamy.
I am lucky enough to have a Vitamix blender so if made it easy and smooth.

🍞🥖I made my first bread using a sourdough starter (given to me by the Peak family)It’s not an official sourdough bread, it included yeast and baking soda. It it delicious and the texture is awesome-crispy on the outside and crumby and soft on the inside. I could have eaten the whole loaf myself.
Next bread will be an official sourdough bread!

🍍 an easy way to make a decadent dessert to Doctor a box cake mix. Use a yellow cake mix and substitute pineapple juice for the water. Prepare your pan with 1/4 cup melted butter, the spread 1/2 cup brown sugar over the butter. Spread one can drained crushed pineapple over the sugar. Pour batter over pineapple and bake as directed on box. Turn out onto a plate immediately after removing from oven.
not every recipe has to be completely from scratch, that’s why they make box mixes. Enjoy.

It’s National English Toffee Day! This is such a decadent treat, and it only has five ingredients and you all have these in your pantry. Get a candy thermometer, available at any store that sells kitchenware and you are on your way.
My recipe has no 🌰 nuts because I made this for my students and we have somebody with a nut allergy. But you could add chopped almonds to the top before the chocolate sets to make it even more special.

When my husband Adam and I were in high school, one of our favorite lunches from the cafeteria at Triton Regional High School was Chicken Noodle Soup served with Peanut Butter Muffins. I set out to find a recipe for these muffins that I could make at home. I stumbled across a recipe for a Peanut Butter Bread. I made the bread and I was suddenly transported back to my high school days.
It is a dense bread packed with peanut butter flavor. It is the perfect accompaniment to homemade chicken noodle soup.

Peanut Butter Bread



4 cups flour
½ cup sugar
2 tablespoons baking powder
1 teaspoon salt
1 cup peanut butter (smooth or crunchy)
2 eggs, beaten
1 ¾ cup milk
1 tablespoon lemon zest
1 tablespoon lemon juice

1. Combine flour, sugar, baking powder, and salt. Mix until combined.
2. Using a pastry blender or two forks, cut peanut butter into flour mixture. Continue until peanut butter is evenly distributed throughout flour.
3. In a separate bowl, mix together eggs, milk, lemon zest, and lemon juice.
4. Pour liquid mixture into flour mixture and mix only until combined.
5. Prepare large loaf pan (grease or use pan spray) and pour mixture into pan.
6. Bake 60 to 75 minutes at 350° until toothpick inserted into center comes out clean.
7. Let rest for about 10-15 minutes before cutting with a serrated knife.

Growing up in Salisbury Massachusetts, we had family gatherings all the time. 🎄We had family parties for Christmas, 🍗Thanksgiving, or just your random Sunday afternoon. 🎉There were, of course, the traditional foods for the occasion. There was dessert, drinks and appetizers like 🥦🥒🥕veggies and dip. One appetizer always comes to mind when I think of these gatherings, 🍤Shrimp Dip served with Sociable crackers. My mom would make this and our guests would devour it.

When my husband and I started dating, he was included in our family gatherings. He loved all the food that was served at these parties, especially the Shrimp Dip.

Fast forward 42+ years, he still asks for this dip for our holiday table, and we still serve it with the Sociable crackers.

Mom Auger’s Shrimp Dip

1 8 oz package cream cheese
1 4 oz tub whipped cream cheese
1 small can tiny shrimp
Garlic salt
Cocktail sauce to taste
Worcestershire sauce to taste

Mix with an electric mixer until well blended
Serve with crackers.

🍋There are certain types of muffins that are standards-Blueberry, corn, pistachio, and of course, lemon poppyseed. Here is a nice, moist, tasty muffin.

Lemon Poppyseed Muffins

2 ¼ cups flour
2 tsps baking powder
¼ tsp baking soda
2 Tbsp poppyseeds
¼ tsp salt
1 cup sugar
2 Tbsp lemon zest
1 cup yogurt or sour cream
1/3 cup milk
½ cup melted butter
2 large eggs
1 Tbsp lemon juice
1 tsp vanilla

Preheat oven to 425 degrees. Line 18 muffins pan wells with paper liners.
In a large bowl mix together flour, baking powder, baking soda, salt, and poppyseeds. In a separate bowl mix together sugar lemon zest, lemon juice, sour cream (or yogurt), milk, melted butter, eggs, and vanilla. Whisk until smooth. Pour into dry mixture and mix only until combined. Scoop into paper lined muffin pan. Bake 15-17 minutes until tops are golden and toothpick inserted into the center comes out clean.
