I made these on a random Tuesday afternoon because I couldn't stop thinking about the lemon cookies my neighbor used to bring over when I was little. You know the ones—soft in the middle, covered in so much powdered sugar you'd get it all over your shirt, and somehow tasted like sunshine and butter had a baby.

These disappeared so fast I didn't even get a chance to hide a few for myself. My husband ate three standing at the counter before dinner, and I caught my daughter sneaking one for breakfast this morning. No judgment. I would've done the same.
The outside gets this delicate crispy-chewy texture while the inside stays impossibly soft and almost custardy. And that powdered sugar? It melts into the warm cookie just enough to create this sweet, dreamy coating that sticks to your fingers in the best way.
