šMust Try Fall Grilling Kabob Recipeš

š„Autumn Apricot-Glazed Chicken Kabobsš„
Ingredients:
⢠2 lbs boneless, skinless chicken breast, cut into 1-inch cubes
⢠4 tbsp olive oil
⢠1 tbsp sazon seasoning (for vibrant color and taste)
⢠1 tsp ground cinnamon
⢠1 tsp ground cumin
⢠1 tsp dried rosemary
⢠1 tsp dried thyme
⢠1/2 tsp ground ginger
⢠1/2 tsp ground turmeric
⢠1/4 tsp ground nutmeg
⢠1/4 tsp ground clove
⢠Salt and pepper to taste
Apricot Glaze:
⢠1/2 cup apricot preserves
⢠1/4 cup apple cider vinegar
⢠1 tbsp honey
⢠1 tbsp Dijon mustard
⢠1 garlic clove, minced
⢠Salt and pepper to taste
Instructions:
1. Marination: Pour olive oil into a large bowl.
Add in the sazon seasoning, ground cinnamon, ground cumin, dried rosemary, dried thyme, ground ginger, ground turmeric, ground nutmeg, and ground clove.
Mix these ingredients well to achieve a paste-like consistency.
Now, add the chicken cubes to the bowl, making sure each piece is well-coated with the spice mixture.
Cover and marinate for at least 2 hours in the refrigerator.
2. Apricot Glaze Preparation: In a small saucepan, combine all glaze ingredients.
Bring to a simmer over medium heat. Stir continuously until slightly thickened, about 5-7 minutes.
Remove from heat and set aside.
3. Grilling Setup: Using a chimney starter, ignite the charcoal.
Once glowing and covered with gray ash, pour out and arrange the coals evenly over half of the coal grate.
Set the cooking grate in place, cover the grill, and allow it to preheat for 5 minutes.
Youāre aiming for medium-high heat, around 400-425°F.
Use the hand test; you should be able to hold your hand about 5 inches above the grill grates for 4-5 seconds.
4. Skewering the Chicken: Retrieve the marinated chicken from the refrigerator.
Load the chicken cubes onto your Original 3 Way, leaving 1/2-inch at the tip of each tine.
Ensure the pieces are snug but not overcrowded.
5. Grilling: Place the loaded Original 3 Way on the hot side of the grill.
Let the chicken sear to achieve a charred exterior, about 2-3 minutes per side.
Once charred, move the skewer to the cooler side of the grill, brush generously with the apricot glaze, and cover the grill.
Let the chicken cook for another 12-15 minutes, brushing with glaze and turning occasionally, until the internal temperature reaches 165°F.
6. Serving: After taking the skewer off the grill, allow it to rest for about 5 minutes.
Utilize the food release lever to slide off the succulent, glazed chicken.
