I didn't take a pic last night because I had an extra kiddo and needed to get the fam fed, so you get a pic of the leftovers I brought for lunch today.
Creamy chicken over rice
Ingredients:
Chicken breasts (mine were frozen)
2 cans of cream soup (I used Pacific Foods brand cream of chicken and cream of mushroom)
1 carton of chicken stock or broth
Rice (I used 2 cups uncooked to 3-1/2 cups of broth)
Instructions:
In the crockpot:
Season the bottom before adding the chicken (I used Kinder's Roasted Chicken seasoning, onion powder, garlic powder, and celery salt)
Add chicken (I put mine in frozen)
Season the top of the chicken
Mix 1 can of soup with approx 1 can of chicken stock (I measured the 3-1/2 cups of broth I needed for my rice and mixed whatever was left with the can of soup)
Pour the soup mixture over the chicken
Cover and cook on low for 6-8 hours or high for 4 hours
30 minutes before the chicken is done, make the rice.
Add 2 cups of rinsed white rice and 3-1/2 cups of chicken stock to a pan with a fitted lid
I added a little salt and a pat of butter
Heat on high, covered, until boiling
Once boiling, stir once to make sure rice isnt sticking, then turn heat all the way down and simmer, covered and undisturbed, for 13-15 minutes
After simmering, remove from heat and allow to rest (still covered) for another 10 minutes
Fluff with a fork
When chicken is done in the crockpot
Add the remaining can of soup
Shred the chicken in the crockpot (I used my ground beef masher thing from Pampered Chef)
Optional: Sometimes I'll add a cornstarch slurry to thicken the soup (1 Tbsp cornstarch + 1 Tbsp COLD water)
Continue to cook on low heat until the sauce thickens to the desired consistency
Serve shredded chicken w/sauce over rice. Serve with a veggie if you want. I served with sauteed zucchini and yellow squash. This was a hit, and it was super easy!
Note: This recipe made enough for me, my 19-year old daughter, and 2 pre-teen boys, and I had enough leftover for 2 lunches this week. And I used small chicken breasts. If you have a larger crowd to feed add another chicken breast and another can of soup.
