My Dämm son has a friend over and he's a picky eater. I keep trying to break him down. Tonight is pan-fried chicken, mashed potatoes, gravy, and air-fried broccoli. He's eating chicken and potatoes. I call that a win!

Meal-prepping for school lunches this week.

Made loaded potato soup for dinner last night.

Ingredients:
1/4 cup of butter, divided
1 medium onion
1-2 carrots
1-2 celery stalks
Jarlic (measure with your heart)
1/4 cup of flour
1/4-1/2 cup of bacon bits (real bacon not the fake bacon chips)
Seasonings:
Garlic salt
Seasoning salt
Celery salt
Chili powder
Pepper
2 cartons of chicken stock
8 (or so) potatoes depending on size
Approx 1/2 cup of heavy cream
Approx 1/4 cup of sour cream
Shredded cheese
Green onion

Instructions:
Peel potatoes and cut into approx 1" pieces
Finely chop (practically mince) onion, carrots, and celery
Chop green onions and set aside
Boil potatoes in the 2 cartons of chicken stock
Sauté the chopped veggies in half the butter until soft (I added in this order with a healthy pause in between: carrots, then celery, then onion, then garlic)
Add the seasonings (measure with your heart)
Add the remaining butter and flour
Cook until the flour is incorporated and begins to darken
When the potatoes are fork tender, add the veggie mixture and bacon bits to the potatoes
Heat to a boil
Use an immersion blender to partially blend the soup (or blend all of it if you want - I like some chunks of potato in mine)
Add sour cream, heavy cream, and chopped green onions
Simmer until everything is incorporated
Stir in shredded cheese (measure with your heart)

Garnish with sour cream, cheese, bacon bits, green onions, or whatever you want.

This made enough for 4 people for dinner last night and 2 hefty bowls of leftovers.

We're having biscuits and sausage gravy for dinner tonight.

Ingredients:
1 tube of biscuits (I used Grand's)
1 lb breakfast sausage (I used Jimmy Dean)
1/4 c of flour
Approx 2 cups of milk
Seasoning (I used onion powder, garlic salt, and black pepper)

Instructions:
Preheat oven and cook biscuits according to package directions
Brown the sausage (do not drain)
Once sausage is browned, add flour
Cook for approx 2 minutes until flour is cooked
Add milk and seasonings
Stir over medium low heat until it thickens

Note re: timing: I preheated the oven when I started browning the sausage and the biscuits were done at the exact same time as the gravy.

I also added scrambled eggs because they're a requirement for me with biscuits & gravy.

I didn't take a pic last night because I had an extra kiddo and needed to get the fam fed, so you get a pic of the leftovers I brought for lunch today.

Creamy chicken over rice

Ingredients:
Chicken breasts (mine were frozen)
2 cans of cream soup (I used Pacific Foods brand cream of chicken and cream of mushroom)
1 carton of chicken stock or broth
Rice (I used 2 cups uncooked to 3-1/2 cups of broth)

Instructions:
In the crockpot:
Season the bottom before adding the chicken (I used Kinder's Roasted Chicken seasoning, onion powder, garlic powder, and celery salt)
Add chicken (I put mine in frozen)
Season the top of the chicken
Mix 1 can of soup with approx 1 can of chicken stock (I measured the 3-1/2 cups of broth I needed for my rice and mixed whatever was left with the can of soup)
Pour the soup mixture over the chicken
Cover and cook on low for 6-8 hours or high for 4 hours

30 minutes before the chicken is done, make the rice.
Add 2 cups of rinsed white rice and 3-1/2 cups of chicken stock to a pan with a fitted lid
I added a little salt and a pat of butter
Heat on high, covered, until boiling
Once boiling, stir once to make sure rice isnt sticking, then turn heat all the way down and simmer, covered and undisturbed, for 13-15 minutes
After simmering, remove from heat and allow to rest (still covered) for another 10 minutes
Fluff with a fork

When chicken is done in the crockpot
Add the remaining can of soup
Shred the chicken in the crockpot (I used my ground beef masher thing from Pampered Chef)
Optional: Sometimes I'll add a cornstarch slurry to thicken the soup (1 Tbsp cornstarch + 1 Tbsp COLD water)
Continue to cook on low heat until the sauce thickens to the desired consistency

Serve shredded chicken w/sauce over rice. Serve with a veggie if you want. I served with sauteed zucchini and yellow squash. This was a hit, and it was super easy!

Note: This recipe made enough for me, my 19-year old daughter, and 2 pre-teen boys, and I had enough leftover for 2 lunches this week. And I used small chicken breasts. If you have a larger crowd to feed add another chicken breast and another can of soup.
