Greek Lemon Herb Chicken with Garlic Herb Goat Cheese & Roasted Potatoes
Ingredients
4 boneless, skinless chicken breasts
1½ lb baby potatoes, halved
3 tbsp olive oil
4 cloves garlic, minced
Juice of 1 large lemon
1 tsp dried oregano
1 tsp dried thyme
½ tsp paprika
½ tsp black pepper
¾ tsp salt
½ cup crumbled goat cheese
2 tbsp fresh parsley, chopped
1 tbsp fresh dill, chopped
1 tbsp fresh basil, chopped
1 tsp lemon zest
½ cup chicken broth
1 tbsp honey, optional
Instructions
Preheat the oven to 425°F (220°C). Place the halved potatoes in a large baking dish or sheet pan. Toss them with 1½ tablespoons olive oil, half the minced garlic, oregano, thyme, paprika, salt, and pepper. Spread them in a single layer and roast for 20 minutes.
Meanwhile, pat the chicken breasts dry. If they are thick, gently pound them to an even thickness. In a bowl, combine the remaining olive oil, lemon juice, remaining garlic, oregano, thyme, paprika, black pepper, and a pinch of salt. Add the chicken and coat well.
Remove the potatoes from the oven and push them slightly to the sides. Place the seasoned chicken in the center. Pour the chicken broth around the potatoes and chicken. Return the pan to the oven and bake for 18–25 minutes, depending on the thickness of the chicken, until the chicken reaches 165°F (74°C) internally.
While the chicken cooks, prepare the goat cheese. Mix the goat cheese with parsley, dill, basil, lemon zest, and a pinch of black pepper. For a slightly sweeter Greek-inspired finish, mix in the optional honey.
Remove the chicken from the oven and let it rest for 5 minutes. Spoon the garlic-herb goat cheese generously over each chicken breast. Garnish with fresh parsley and lemon zest.
Serve the juicy lemon-herb chicken alongside the golden roasted potatoes. For extra freshness, add lemon wedges and a simple Greek salad.
