GBEGIRI SOUP - Traditional Yoruba Bean Soup Recipe

- Dried fish: 2 pieces
- Stockfish: 2 pieces (pre-soaked)

HEAT:
- Scotch bonnet peppers (ata rodo): 2-3 (adjust to taste)

Blender or food processor

PREPARATION STEPS
STEP 1: BEAN PREPARATION
ACTION: Soak and Clean
PROCESS:
1. Pick through beans to remove stones and debris
2. Rinse beans thoroughly in cold water
3. Soak overnight (8-12 hours) OR quick soak method:
- Boil beans for 2 minutes
- Remove from heat, cover, let sit 1 hour
4. Drain and rinse soaked beans
5. Remove bean skins by rubbing gently (optional for smoother texture)
STEP 2: COOKING THE BEANS
ACTION: Boil Until Tender
PROCESS:
1. Place beans in large pot
2. Add 8 cups water
3. Add whole onion
4. Add ginger piece (optional)
5. Bring to boil over high heat
6. Reduce heat to medium
7. Cook for 1.5-2 hours until beans are very soft

TIP: Don't add too much water at once - easier to thin than thicken
STEP 4: COOKING THE SOUP

1. Pour blended beans back into pot
2. Add locust beans (iru)

FINAL CONSISTENCY: Should be smooth, thick but pourable
If too thick: Add small amounts of warm water
If too thin: Simmer uncovered to reduce
