Artichoke And Red Pepper Frittata (Ww 4 Points)

INGREDIENTS
- olive oil flavored cooking spray
- 1 medium onion, peeled and chopped
- 1 small garlic clove, minced
- 1 medium potato, cooked, peeled and sliced 1/4-inch thick
- 6 ounces artichoke hearts, canned without oil, about 1 cup, coarsely chopped
- 1 cup roasted red pepper, coarsely chopped
- 3/4 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/2 teaspoon black pepper, freshly ground is best
- 6 large egg whites
- 2 large eggs
- 1/2 teaspoon crushed red pepper flakes
- 1/2 cup parmesan cheese or 1/2 cup asiago cheese, grated

METHOD
1. Lightly coat a 10-inch nonstick, ovenproof skillet with cooking spray over medium heat. (Please note, using a smaller or larger skillet changes both the cooking time and results.).
2. Add onion and sauté for a minute. Add garlic, cooked potatoes, artichokes and peppers. Sauté an additional two minutes, stirring occasionally.
3. In a medium bowl, beat together red pepper flakes, oregano, salt, pepper, egg whites and eggs.
4. Pour over vegetable mixture. After a minute, gently lift egg mixture to let uncooked egg portion run to bottom of skillet. Cook frittata over medium heat until eggs begin to set, about 5 minutes.
5. When almost set, sprinkle with cheese. Place skillet under broiler 3 to 4 inches from heat until cheese melts, about one minute.
6. Cut into 4 wedges and serve hot. (I actually like cold frittatas as well, Å la the Spanish tortilla.).

Instant Pot Guinness Corned Beef

INGREDIENTS
- 2 cups water
- 1 (12 fluid ounce) can or bottle dark beer (such as Guinness)
- 4 cloves garlic, minced
- 1 (3 pound) corned beef brisket with spice packet
- 1 cup brown sugar
- 10 baby red potatoes, quartered
- 4 large carrots, peeled and cut into matchstick pieces
- 1 onion, peeled and cut into bite-sized pieces
- ½ head cabbage, coarsely chopped

METHOD
1. Combine water, beer, and garlic in a multi-functional pressure cooker (such as Instant Pot). Place trivet inside.
2. Rub all sides of brisket with brown sugar. Place on the trivet and sprinkle spice packet on top. Close and lock the lid.
3. Select high pressure according to manufacturer's instructions; set timer for 90 minutes. Allow 10 to 15 minutes for pressure to build.
4. Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid. Transfer brisket to a baking sheet.
5. Cover brisket with aluminum foil; let rest for 15 minutes.
6. Meanwhile, remove the trivet from the pot. Place potatoes, carrots, onion, and cabbage in the bottom of the pressure cooker. Close and lock the lid.
7. Select high pressure according to manufacturer's instructions; set timer for 5 minutes. Allow 10 to 15 minutes for pressure to build.
8. Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid. Serve vegetables with rested brisket.

Maple Syrup Pork Chops

INGREDIENTS
- 6 pork chops
- vegetable oil (small amount for browning chops)
- 1/4 cup onion, chopped
- 1 tablespoon vinegar
- 1 teaspoon chili powder
- 1/2 teaspoon pepper
- 1/4 cup maple syrup
- 1/4 cup water
- 1 tablespoon Worcestershire sauce
- salt
- flour (as needed to thicken the gravy)

METHOD
1. Preheat the oven to 400°F.
2. Lightly brown the pork chops in a small amount of oil, then place them in a flat baking dish with sides.
3. Combine the other ingredients in a small saucepan and heat until warm; pour over chops.
4. Cover and bake for 45 minutes, basting occasionally.
5. Place the pork chops on a warming platter and pour the sauce into a saucepan.
6. Thicken it slightly with flour to make a gravy, salt to taste, and serve it over the chops.

Southern Biscuit Muffins

INGREDIENTS
- 2 1/2 cups all-purpose flour
- 3 tablespoons sugar
- 1 1/2 tablespoons baking powder
- 3/4 cup cold butter or 3/4 cup margarine
- 1 cup cold milk

METHOD
1. Preheat oven to 400F degrees.
2. Grease one 12-cup muffin pan (2&1/2-inch size).
3. In large bowl combine flour, sugar and baking powder.
4. Cut butter into thin slices and add to dry mixture.
5. Using a pastry cutter or low speed of your mixer, combine the butter with the dry mixture until it resembles coarse crumbs.
6. Stir in milk, with a spoon or fork.
7. Stirring only until flour mixture is moistened.
8. Batter will be thick and lumpy.
9. Spoon into muffin cups, dividing evenly between all 12 cups.
10. Bake for 20 minutes or until tops are golden brown.
11. When done, remove from muffin pan immediately.

Pavlovas With Lemon Curd And Tropical Fruit

INGREDIENTS
- 4 egg whites
- 1 cup caster sugar
- 1 teaspoon vanilla essence
- 1 tablespoon lemon rind, grated
- 2 tablespoons lemon juice
- 1/4 cup caster sugar
- 2 eggs
- 50g butter (1 3/4 oz)
- 1 cup cream, whipped
- 2 bananas, sliced
- 1 mango, sliced
- 8 passion fruit

METHOD
1. Preheat the oven to 150°C (300°F/Gas 2). Beat the egg whites in a clean dry bowl until soft peaks form. Add the sugar gradually, beating well after each addition, until thick and glossy with stiff peaks. stir in the vanilla.
2. Line a tray with baking paper and spoon the mixture into six small nests on the tray. Bake for 20 minutes, then reduce the oven to 120oc (250oF/Gas 1/2) and bake for 10 minutes Turn off the oven and leave the pavlovas to cool in the oven with the door ajar.
3. To make the lemon curd, put the lemon rind, lemon juice, sugar, eggs and butter in a heatproof bowl and whisk together.
4. Place the bowl over a pan of barely simmering water, making sure the base of the bowl is not sitting in the water. Stir for about 15 minutes, or until the curd is thick - do not allow it to boil. Lat plastic wrap on the surface and leave to cool. Fold on the whipped cream all through the curd. Spoon into the pavlovas and top with banana, mango and passionfruit.

Healthy Whole Wheat Banana Yogurt Pancakes

INGREDIENTS
- 2 cups Robin Hood Nutri Flour Blend or 2 cups all-purpose flour
- 1 tablespoon baking soda
- cinnamon, to taste
- pumpkin pie spice, to taste
- 1 ripe and large banana, mashed
- 1 cup nonfat plain yogurt
- 1/2 cup skim milk
- 2 tablespoons brown sugar
- 1/2 tablespoon canola oil
- 2 eggs, lightly beaten
- 1 teaspoon vanilla extract
- splash banana flavoring (banana extract)
- 1 small banana, chopped

METHOD
1. Sift the flour, baking soda, cinnamon, and pumpkin pie spice in a large bowl.
2. Whisk the mashed banana, yogurt, milk, sugar, oil, eggs, vanilla, and banana extract in a medium bowl.
3. Add the wet ingrediants to the dry, mix together, then fold in the chopped banana.
4. Pour on a greased griddle preheated to 375. Batter will be a little thick, you may have to spread the batter a little as you pour it.
5. Flip pancakes when cooked on the first side, cook the second.
6. Enjoy with syrup.

Penne With Shrimp And Spicy Tomato Sauce

INGREDIENTS
- 1/4 cup olive oil
- 1 tablespoon lemon juice
- 1 1/2 teaspoons paprika
- 1 1/2 teaspoons ground cumin
- 1/4 teaspoon ground ginger
- 1/4 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/8 teaspoon fresh ground black pepper
- 3/4 cup canned crushed tomatoes in puree
- 1/3 cup cilantro or 1/3 cup parsley, chopped
- 3/4 lb penne rigate
- 1 lb medium shrimp, shelled

METHOD
1. In a large glass or stainless-steel bowl, whisk together the olive oil and the lemon juice with the paprika, cumin, ginger, oregano, salt, and pepper. Stir in the crushed tomatoes and the cilantro.
2. In a large pot of boiling, salted water, cook the penne rigate until almost done, about 12 minutes. Add the shrimp and cook until it and the pasta are just done, about 1 minute longer. Drain. Toss with the tomato sauce.

Variations:
1. Penne with Mozzarella and Spicy Tomato Sauce;Use 1 pound fresh mozzarella, cut into 1/4-inch cubes, in place of the shrimp. Toss the cheese in at the end.

INGREDIENTS
- 1 onion, chopped
- 2 scallions, chopped
- 1 red pepper, chopped
- 3 garlic cloves, minced
- 1 tablespoon sesame oil
- 1 lb lean ground beef, browned (can sub turkey or even chicken if desired)
- 2 tablespoons fresh ginger, minced
- 1 teaspoon Chinese five spice powder
- 1/4 cup dry sherry
- 1/4 cup hoisin sauce
- 2 tablespoons chili powder
- 2 tablespoons soy sauce
- 2 tablespoons thai style chili sauce
- 1 teaspoon Splenda sugar substitute or 1 teaspoon sugar
- 1 (15 ounce) can diced tomatoes
- 1 (16 ounce) can red beans, drained and rinsed
- 1/2 cup tomato sauce

METHOD
1. Sautee onions, red pepper and garlic in sesame oil until tender (about 5 min).

3. Reduce heat and simmer for 1 hour.

Earl Grey Pound Cake With Lemon Curd

INGREDIENTS
- 1 1/2 cups butter
- 6 eggs
- 1 1/2 cups sour cream
- 3 1/3 cups all-purpose flour
- 4 teaspoons finely ground earl grey tea, leaves*
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 1 1/2 cups granulated sugar
- 1 1/2 teaspoons vanilla
- 1 1/2 cups lemon curd (about one and a half 10-oz. jars)

METHOD
1. Let the butter, eggs, and sour cream stand at room temperature for 30 minutes.
2. Preheat oven to 350°F. Grease and flour 12 individual fluted tube pans; set aside.
3. In a large bowl combine flour, ground tea leaves, baking powder, salt, and soda; set aside.
4. In a very large mixing bowl beat butter with an electric mixer on medium-high speed for 1 to 2 minutes.
5. Add granulated sugar; continue beating 5 minutes.
6. Beat in the eggs, 1 at a time, scraping sides of bowl after each addition.
7. Beat in vanilla (Mixture may appear curdled).
8. Alternately add flour mixture and sour cream to butter mixture, beating on low speed after each addition until combined.
9. Spoon batter into prepared pans, filling two-thirds full.
10. Bake 25 minutes or until pick inserted near center comes out clean.
11. Cool in pans on racks 10 minutes.
12. Remove; cool on racks.

TO FINISH:
1. Split cakes in half. Place tops on plates upside down; spread with curd.
2. Add bottoms to creat a proper looking bundt cake.
3. Sprinkle powdered sugar.

*TIP:
1. For 4 teaspoons ground Earl Grey tea leaves, open bags with finely ground tea leaves (5 bags) or use mortar and pestle to finely grind loose Earl Grey tea leaves; measure 4 teaspoons.).

INGREDIENTS
- filtered water
- 2 -3 tablespoons freshly ground coffee (I used a full-bodied Breakfast Blend)
- 1 sprig lavender flowers (read *Note) or 1/2 tablespoon dried lavender flowers (read *Note)
- vanilla sugar
- cream (heavy cream, soy milk, etc.)

METHOD
1. *Note: I estimated the amount of ground coffee and lavender to use for this recipe. Depending on the type of coffee maker you have, it may be necessary to adjust the amounts.
2. Pour filtered water into the coffee maker.
3. Place the ground coffee in the coffee maker basket and add the lavender.
4. Brew.
5. If desired, add sugar and/or cream.
