Today was ventilation day. Even though air flows out from the roaster, the chaff from the beans being roasted coats the inside of the ventilation system and slows the flow of air.

Do you know what happens when the air slows down? It affects the flavor of the coffee. Can't have that.

Now, we roast, bringing more fresh coffee to the Tri-Cities.

How fresh is too fresh? Are you looking for a label that says it was roasted today? How about yesterday? I want to hear what you think is the best age for the coffee you buy. Let me know in the comments!
