🇮🇹🇮🇹🇮🇹On location today at “The Our Lady of Grace Church 15th Annual Primavera”. I cooked my famous Zucchini fritters for more than 200 people who also got to sample food from local restaurants and vendors. My fritters got the thumbs up by the original “Rosa Mia”. Even the Bishop of RI and Channel 12’s Mike Montecalvo joined us. A beautiful day surrounded by good people. So happy to be a part of it. ♥️

I’ve been MIA in the Pantry due to the loss of my mother on May 5th. Just days before my birthday and 3 weeks before her 91st Birthday. Just last year we gave her the best 90th Birthday Party ever!, with everything that she wanted, including surprise family flown in from a few different states, trays of her late cousin Arlene’s recipe of Italian Wandi ( to which I complied 😊♥️) and an accordion player serenading her throughout the day.
She was a beautiful Mother to 4 of us, Grandmother to 7, and Great Grandmother to 9.
She was the Matriarch, the glue that held us all together and the last surving member in my family of the greatest generation ever. I inherited her love of cooking, serving and hosting family and friends, and the Quirky need to have a stockpile of bedspreads and curtain changes 😊. She was “present” and telling stories of the past , and also checking in on every one of us and praying the Rosary daily right up until she suddenly passed.
Just a few weeks ago, she planned, orchestrated and directed Easter Sunday Dinner to which every child, grandchild and great grandchild attended. She said it was one of the happiest days of her life. With all this shared….I know I was beyond blessed to have a mother for 65 years of my life, but I miss her terribly. 💔
I’ll be back next month with some of her favorite dishes to share with you.

What a great afternoon spent at Roma on Providence’s Federal Hill! A local school Italian Club asked me to do a fresh pasta demonstration. So I took the Pantry on the road 😁 The kids were great and loved it. Thanks to the folks at Roma for welcoming me into thier kitchen. If you’re in the area stop in. Here’s my combination
MEATLOAF/POT ROAST
I experimented with this a few weeks ago because I had a cake in the oven and I didn’t want to disturb it to bake a meatloaf.
This quick fix has changed the way I’ll make meatloaf forever 😁
I used my extra big Faberwear jumbo cooker. A Dutch Oven would work too, but this jumbo cooker that I bought on a great sale at Macy’s has been a dream!
Guaranteed tender moist meatloaf everytime.
The key is to brown and seal the meatloaf in the pan first with some sweet onions for some beautiful flavor , then add whatever you would normally use for brown gravy. I added carrots, potatoes and peas for a one pot meal. ♥️Fabulous. If you want instructions or tips let me know. 😊

ONE POT MEATLOAF MEAL RECIPE

FOR THE Meatloaf:
Mix all together in a bowl
-1 1/4 lbs. Lean ground beef. (I use 85%)
-1 1/2 cups dry un-seasoned bread crumbs
-1/2 tsp. Black pepper
-1 tsp. Salt
-1 package dry Lipton onion soup mix
-1/2 cup milk
-1/2 cup water
-2 eggs
Shape into a loaf and place it in a Dutch oven pot that’s been greased with about 2 tablespoons of corn oil. At the same time
ADD: 1 large sweet onion cut into chunks into the pot.

Turn the heat up to medium high and start to brown the meatloaf. (it’ll happen quickly so stay near the stove) and turn the meatloaf a quarter turn 4 times until it’s browned all around and the onions are turning a golden color.
-then add carrot chunks and quartered potatoes. Toss them around to let them soak up some of the flavor for just a few minutes.

-Mix 1 can of beef broth with two tablespoons of flour in a little bowl or measuring cup. Pour this over the pan of meat and vegetables.
Turn up the heat so it starts to simmer and thicken.

-add some frozen peas

-stir it, then cover it and let it simmer for about 30 minutes or until the potatoes and carrots tender.
*VARIATION: for a shortcut you can use an envelope of McCormicks dry brown gravy mixed with a cup of water
instead of the broth and flour.
