Seared Scallops with Creamy Spinach Sauce
Ingredients:
12 large sea scallops, cleaned and patted dry
2 tbsp olive oil
Salt and pepper to taste
2 tbsp butter
3 garlic cloves, minced
1 cup heavy cream
1/2 cup grated Parmesan cheese
2 cups fresh spinach, chopped
1/4 tsp red pepper flakes (optional)
Fresh herbs (thyme or parsley) for garnish
Instructions:
Heat olive oil in a skillet over medium-high heat.
Season scallops with salt and pepper. Add scallops to the hot skillet and sear for about 2-3 minutes per side until golden brown and cooked through. Remove scallops from the pan and set aside.
In the same skillet, add butter and minced garlic. Sauté for 1 minute until fragrant.
Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese and cook until the sauce thickens, about 2-3 minutes.
Add chopped spinach and red pepper flakes (if using). Cook for 1-2 minutes until the spinach wilts.
Return the scallops to the skillet, spoon the sauce over them, and let them warm through.
Garnish with fresh herbs and serve immediately.
