KALE SAUCE WITH VEGGIES. 😋
Look at all of that green goodness.
🌱
INGREDIENTS
Sauce
2 bunches of kale
1 lemon juice
1/2 cup nutritional yeast
1/2 cup of water
2 TBPS minced garlic
1 tsp rosemary

Veggies
15 oz frozen peas
1 large onion, peeled and diced
1 bag of broccoli, carrots, cauliflower mix

RECIPE
Sauce
Wash and roughly break apart the kale, by hand if fine. Steam the kale for 10 mins in a pot with about 1/4 cup of water. Place the steamed kale and the rest of the sauce ingredients in a high speed blender. Blend until smooth. Set it aside.

Veggies
Place a pot on the stove and turn it to high heat. I use a ceramic coated pan. Once the pot is hot add onions. Add a bit of water so that it won't stick. Continue to add water as the water evaporates and the onions become translucent. Add in the carrots and repeater the water until the carrots are tinder. Lower the heat to medium. Roughly cut up the broccoli and cauliflower into smaller pieces and then add that to the pot and also the peas. Stir and continue to add water if needed. Once the broccoli and cauliflower begin to soften add the sauce and stir. Lower the heat to low for the sauce to simmer. Cover the pot with a lid and let it simmer for 5 mins.

Okra and Squash in Enchilada Sauce 😋
No beans, legumes, or lentils? No problem! Okra to the rescue in my

INGREDIENTS:
1/2 Kabocha squash seeded, peeled, and diced
16 oz frozen cut okra
1 yellow onion
1 orange peppers seeded and diced
8 oz tomato sauce no salt
1 1/2 TBPS chilli powder
1/4 tsp chipotle powder
1/4 tsp onion powder
1/8 tsp garlic powder
1 1/2 cups water

RECIPE:
I set the Instapot to saute mode. I added the onions and added a few drops of water so it would stick for about 5 mins. Once the onions were translucent hit cancel on the instapot and then added the rest of the ingredients. I covered the lid and set it to manual/pressure cook for 10 mins.

LUNCH: Moraccan Lentil Squash 😘
Kabocha squash to be exact. When I peeled and cut this squash it reminded me of an avocado. The sweetness from this squash paired nicely with the brown lentil. Here's how I did it in my instant pot.
🌱
INGREDIENTS:
1/2 of Kabocha squash, seeded, peeled, and diced
16 oz dried lentils
1 onion peeled and diced
1 yellow pepper seeded and diced
15 oz can diced tomato, no salt
8 oz can tomato sauce, no salt
1 TBSP smoked paprika
1 tsp cumin
1/4 cayenne pepper
4 cups water

RECIPE:
I set the instant pot in saute mode. I added onions and added a few drops of water so it wouldn't stick. After 5 mins I added the yellow peppers and repeated the water for 3 more mins. I added the squash for 5 mins. I hit cancel and added the rest of the ingredients. I covered the lid and set the instant pot for 45 mins on manual. Once the 45 mins are over I released the steam.

LUNCH: Acorn Squash Chana Masala 😋

I love the combination of a squash with lentils/legumes/beans. This week I was inspired with garbanzo beans and acorn squash. Chana masala is my favorite meal to make with garbanzo beans. I used my trusty instant pot to make this recipe. If you are familiar with making chana masla on stove top, I would suggest two things. Cook the acorn squash first until you can easily fork it before adding the beans and using canned beans to speed up the cook time.

INGREDIENTS:
1 acorn squash seeded and diced
15 oz of dried garbanzo beans
15 oz or diced tomatoes, no salt
1 yellow onion chopped
1 carrot chopped
1 celery chopped
3 TBPS of minced garlic
1/2 TBPS turmeric
1 1/2 tsp cumin powder
1 tsp coriander powder
1 tsp chilli powder
1 tsp garam masala
4 cups of water

RECIPE:
I set the instant pot to saute. I sauteed the onions, carrots and celery for about 5 mins until the onions became translucent and adding water every so often so that it wouldn't stick. Add the rest of the ingredients and added 4 cups of water or just enough to cover the ingredients. I closed the lid and set the manual cook time for 45 minutes.

LUNCH: Pumpkin and split pea.

I've never made anything with split peas before. I bought split pea and the pumpkin for two unrelated recipes that I never got around to. Thus I went on a search to find a recipe with these two ingredients. It did not come out looking too appealing because I did know split peas got so mushy but omg does it taste amazing! I'm having it for lunch this week and rice and a side of greens. 😄

Ingredients:
A small pumpkin seeded and diced.
2 cups of dry split peas
1 carrot chopped
1 celery stem chopped
1 red onion diced
1 thumb of ginger grated
1 1/2 TBPS curry
2 tsp of cumin
3 TBPS garlic minced

Instructions:
I used my instant pot to make this. On saute mode I cooked the red onions and pumpkin for about 6 mins adding in water so that it wouldn't stick to the pan. I added in all of the rest of the ingredients and 6 cups of water. I set the instant pot on soup mode for 20 mins. The end. If you are using stove top you can cook it with the cover on for about 40 mins on medium.

In the streets of DR there are plenty of sugar cane vendors. The vendors cut them fresh and package them in plastic bags.

It takes approximately 3 feet of sugar cane to make a teaspoon of sugar. After chewing on my second stick my mouth is exhausted! 😬

The way you eat the stick is you take a bite and chew to suck the juice out and then spit out the fiber. They feel like wood shavings when all of the juice is out. 😑 @ Santo Domingo, Dominican Republic

Slice thin yellow potatoes. I use a mandolin on the thinnest setting.

Place the potatoes slices on parchment paper or silicone mat in the microwave.

Microwave for 6 mins.

You can add salt and change the timing on the microwave depending on how you like your chips. If they aren't crispy enough they taste like stale chips the next day.

Super excited that The Game Changers movie will have more exposure and at the same time feeling like this meme. 🤣 This is a must see film if you are an athlete and/or are looking into eating more plant based. I saw it when it debuted earlier in September and I was surprised in just how much it covered. It talked about animal welfare, environmental effects, history, political topics. I hope you will put this in your Netflix queue. Watch it with friends and family! 🎉

🍽 Meal prep for the week complete. 🏆 Breakfast is the usual sancoho soup. Lunch is ratatouille with rice and the left over lentil sloppy Joe's with rice. And I made the plantain as a side. The only downside to meal prepping is all the dirty dishes I have to clean.

🍽 I feel so accomplished this week. I meal prepped for my sister, a coworker, and myself. It brings me so much joy providing healthy meals. I have been meal prepping for my sister for months and she brags about my meals to everyone. The feedback I got from my coworker is that my food is yummy, filling, and surprisingly makes her use the bathroom at a frequency she did know she was capable of. That's the power of plants! 💚

I love to spoil my nieces with my cooking. On our way to my place they asked me for cherries tomatoes, mangoes, and grapes. Of course I said yes! 😁 I made them rice, black beans, plantains, red onions, and kale. They ate the kale! Whoohoo! The plantains not so much, they replaced it with bananas. I also meal prepped vanilla and berry nice cream. 🍌🍦 They were all about that for dessert.
It's Friday the 13th and they want to watch scary movies. 👻
