Just baked a batch of these Buttery French Shortbread Cookies - they're melt-in-your-mouth deliciousness! 🍪
Ingredients:
1 cup unsalted butter, softened
1/2 cup granulated sugar
2 cups all-purpose flour
1/4 teaspoon salt
1 teaspoon vanilla extract
1 egg yolk
Optional: powdered sugar for dusting
Directions:
In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
Add the egg yolk and vanilla extract to the butter mixture, and beat until well combined.
Gradually add the flour and salt to the mixture, mixing until a dough forms.
Shape the dough into a disk, wrap it in plastic wrap, and chill in the refrigerator for at least 30 minutes.
Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
On a lightly floured surface, roll out the chilled dough to about 1/4 inch thickness.
Use cookie cutters to cut out desired shapes from the dough and place them onto the prepared baking sheet.
Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Once cooled, dust the cookies with powdered sugar if desired.
