Soft Sourdough Pretzels. My latest creation, you really can make almost anything with sourdough.

Bread Dough

2 cups - unbleached all purpose flour
1 cup - Activated Wild West Sourdough Starter
1 teaspoon - salt
2 tablespoons - sugar

Combine the above ingredients to make a low hydration sourdough. Just like you would if you were making bread but slightly less moisture.
Do an extra couple of stretching sequences.
When the dough is ready for baking, instead of making a loaf, divide your dough into eight equal pieces.
Roll each piece of dough into a 16 inch long snake, and then shape the snake into a pretzel.

For Boiling and Baking

2 liters - water
⅓ cup - baking soda
1 egg white
Salt flakes

Preheat the oven to 450º F

In a large pot, boil 2 liters of water and add ⅓ cup of baking soda

Separate the white of one egg.

Put parchment paper on two baking sheets.

Boil each pretzel in the water-baking soda solution for 30 seconds and then place evenly on the baking sheets.

Paint the pretzels with eggwhite and sprinkle with the salt flakes.

Bake at 450º F for 20-25 minutes - until golden brown

Pretzels are one sourdough foods that are great right out of the oven. You don’t have to wait for them to cool!!!!

Sourdough Chocolate Chip Cookie Recipe!

These are fantastic!!! And, it's the perfect way to use up some of that Wild West Starter.

Ingredients:

1 cup butter, slightly softened
½ cup (100g) granulated sugar
½ cup (100g) brown sugar
1 egg, room temperature
1 cup sourdough starter, unfed
1 tablespoon vanilla extract
2 cups (250g) all-purpose flour
3/4 teaspoon salt
1 teaspoon baking soda
2 cups (16 ounces) chocolate chips

INSTRUCTIONS:

In a large bowl, combine the softened butter and sugars (Make sure the butter is soft enough to mix by hand.)

Add the egg to the mixture, stirring until incorporated.

Stir in the sourdough starter and vanilla extract.

Add the flour, salt, and baking soda until combined- do not overmix.

Finally, just incorporate the chocolate chips and let the dough chill in the fridge for 15 minutes or refrigerate overnight.

When ready to bake the cookies, preheat the oven to 350°F.

Drop scoops (2-3 tablespoons) of dough onto a parchment-lined baking sheet. (I use a small cookie scoop.)

Bake 10-13 minutes for a crisp cookie.

Bake 7-9 minutes for a super soft cookie.

The cookie MAY appear a little wet in the center and that is ok. It will continue to bake for a few minutes when it comes out of the oven.
