Meet the Product: Whole Mace

You might have tasted this spice without even realizing it.

Mace is the thin, lacy covering around the nutmeg seed. It has some of the familiar warmth of nutmeg, but its flavor is lighter and more delicate, with a gentle sweetness and a subtle aromatic note. We source our whole mace in small batches, keeping its natural aroma and delicate flavor intact.

Think pumpkin soup, mashed potatoes, and savory stuffing, with a little mace adding warmth and depth. It also works beautifully in pulao and biryani, or alongside pumpkin, apples, and pears in desserts.

Mace may not be the spice you reach for first, but once you get to know it, you'll find plenty of ways to use it.

Meet the Product: Cloves

Before they become the cloves in your spice jar, they start out as small flower buds.

Harvested before they open, the buds are dried until they develop their deep brown color and concentrated aroma. The flavor is warm and slightly sweet, with a sharp, spicy character and a gentle bitterness.

They work beautifully in pumpkin soup, homemade stock, and slow-cooked dishes. Ground cloves can add warmth to gingerbread and spiced cakes, while whole cloves pair naturally with baked apples and pears. They can also bring depth to pulao and biryani.

There’s something special about how a small amount can completely change the character of a dish.

Meet the Product: Green Cardamom

Green cardamom is one of those spices that can change the character of a dish with just a few pods.

It comes from the cardamom plant, with tiny aromatic seeds tucked inside each pod. Crack one open and you’ll notice a warm, spicy aroma with a gentle sweetness, bright citrusy notes, and a refreshing hint of mint.

Grown in the hills of Idukki, Kerala, our cardamom is sourced in small batches for its distinctive aroma and flavor.

It’s a wonderfully versatile spice, too. Try it in a warm apple or pear dessert. Add it to a creamy risotto for a subtle aromatic note. Stir it into pulao for extra fragrance. Or infuse a few pods into custard or a simple syrup for desserts and drinks.

If cardamom is new to your kitchen, start with a couple of pods and see where they take you.

Meet the Product: Ground Turmeric

A little turmeric can bring more to a dish than just its beautiful golden color.

Our single-origin turmeric is sourced in small batches from Kerala, India, where it has been part of everyday cooking for generations.

Its flavor is warm and earthy, with a gentle bitterness, subtle peppery notes and a hint of ginger. Cook it gently in oil and its earthy character opens up while the bitterness softens.

Turmeric is also naturally rich in curcumin, the compound responsible for much of its distinctive golden color and one of the reasons turmeric has been studied so widely. A little black pepper is a great companion too, piperine, a compound naturally found in black pepper, can help improve the body's absorption of curcumin.

Use it in a warming turmeric latte, whisk it into scrambled eggs, toss it with roasted vegetables, or blend it into marinades for meat, poultry or fish. A little lemon can bring out its brighter side too.

Turmeric doesn't need to dominate a dish. Sometimes its job is simply to bring warmth, depth and a little brightness to everything around it.

Meet the Product: Black Pepper

Black pepper may be familiar, but fresh, flavorful black pepper is a different experience altogether.

Our single-origin black peppercorns come from the hills of Idukki, Kerala. Its part of the Western Ghats, the birthplace of black pepper and a region renowned for producing some of the world’s finest peppercorns.

Sourced in small batches, these peppercorns carry the distinctive character of where they’re grown.

The flavor? Bold and warm, with an earthy depth, a bright citrusy note and a peppery heat that lingers beautifully. It’s that subtle touch of citrus that makes this pepper especially interesting.

Crack it over eggs. Finish a pasta. Season your vegetables. Add it to a marinade. Or simply grind it fresh over your everyday meals.

Sometimes the most familiar spice is the one that surprises you the most.
