Peach simple syrup! The kids used to love getting peach iced tea from Olive Garden when they were little. I’ve been making my own with organic cane sugar for a few years now so it’s a cleaner homemade option. Peaches, organic cane sugar and water, three simple ingredients! This is a larger batch but a normal batch is 2-3 ripe peaches diced, 1/3-1/2C sugar of your choice(depending on how sweet you want it, add more or less than written), 2C water. Put everything into a pot, whisk over medium heat until you get a gentle boil, reduce heat to low and simmer for 15 min, whisking occasionally. Remove the pot from the burner and let cool. Once cooled, pour into a fine mesh strainer over a bowl and mash the peaches to get all of that liquid out! Should last a few days in the fridge!

Making Camdens favorites this week. When he was little he always wanted to eat hot lunch on the days they had turkey gravy with potatoes. This is chicken gravy with mashed taters and buttered corn on the cob that mom cuts off the cob. It’s such an easy set-it-and-forget-it crockpot meal. I was talking while seasoning the potatoes and didn’t realize the ridiculous amount of smoked paprika I added so we had orange mashed potatoes with a great smokey flavor! 😂

Pork bulgogi tacos with an Asian slaw, Asian pear, pickled red onion and chipotle aioli

Sliced the pork tenderloin while it was semi-frozen
Made the pickled red onion and carrots this morning
Marinated the pork in a bulgogi marinade for 10hrs
Chipotle aioli isn’t traditionally a bulgogi taco topping but I make my own rules. 💁🏻‍♀️

Pickles are done! Did open kettle again and I already hear some popping (sealing)!!!!
Every year that I get canning done, I seem to do it on my busiest work week!

7-quarts and 8-pints of dill pickles done this evening
12-quarts of sweet & Sour done early this morning 💪🏼

Kitchen a mess ✅

My early morning pickle sesh! First time making sweet & sour pickles. These are an all time favorite of mine that a dear family friend introduced me to about 10 years ago. I’ve wanted the recipe ever since and finally asked for it! Thanks, sis! Hopefully they turn out as good as yours! Something special zucchini is my grandma Melody’s recipe and she made it every summer when the veggies were fresh. It usually has cheese melted on top but since this is a meal prep, I will add that later. If I had to choose a dish to eat everyday for the rest of my life. This would be at the top!

Tomato pie. This is usually made in a pie dish but I used a casserole dish today.
I got this recipe from a co-workers about 6-years ago. She used a pie crust but to keep mine low carb, I do a layer of tomatoes in the bottom. The key is to slice your tomatoes, line them in a strainer on the bottom and up the sides, give a heavy shake of salt and let the salt pull the moisture out. Pat them dry and then start putting the dish together. This has ground Italian sausage, sautéed onions and garlic between the tomato and cheesy top layer.

Meal prep Sunday part 1
*stay tuned for tomato pie and something special zucchini later☺️

Pico de gallo is a summer time staple around here. My mom always had this salsa in her fridge in the summer

Guacamole 🥑 only because my avo’s were ripe and I knew I wouldn’t eat them in time! My kids love my guacamole

Ranch dressing! I use this for veggie dip, salad dressing and the base to some of my aiolis. I always take half and make a chipotle ranch aioli

La Scala salad
One of my favorite meal preps for my lunches. Easy and delish! I add the dressing and shredded lettuce right before I eat so it’s fresh. This recipe is all over Pinterest and I add my own twists. I also add a little mayo to my dressing so it’s creamy!

Healthy date snacks
Medjool dates smashed, added some peanut butter (Winco has a peanut crusher that makes fresh peanut butter, it’s GOOD, great texture and free of all the crap the jarred stuff has) melted a few pieces of a 70% cacao chocolate bar with some coconut oil in a double broiler, dropped some on top and topped with crushed pistachios! 🤤

The boys’ apples, grapes, peaches, mini sweet peppers, and meat and cheese snacks are ready to go. I start making lunches and coffee at 4AM so grab-and-go is a must for me!

Taking a study break (I have two assignments due like, yesterday 😳) then back to finish up the last two dishes for the week and I’ll start dinner.
