Here's a step-by-step guide to help you filet a fish properly:

1.Gather Your Tools: You'll need a sharp fillet knife and a cutting board. A pair of tweezers might also be handy for removing any remaining bones.

2.Prepare the Fish:
Make sure the fish is clean and scaled.
Remove the fins by cutting them close to the body.
If your fish hasn't been gutted, make an incision from the a**s up to the head, and remove the guts. Rinse the cavity out well.

3.Make the First Cut:
Place the fish on its side with the tail end facing you.
Make a diagonal cut just behind the head and down to the backbone. This helps in maximizing the amount of meat you can get from the fillet.

4.Separate the Fillet from the Backbone:
Turn the knife flat, so the blade is parallel to the cutting board, and slide it along the backbone, working your way from the head cut towards the tail. Use long, smooth strokes and try to keep as close to the spine as possible to get a clean cut.

5.Remove the Fillet:
Once you reach the tail, you should be able to lift the entire fillet off the fish. Set it aside.
Flip the fish and repeat the process on the other side.

6.Skin the Fillet (if desired):
Place the fillet skin-side down.
Make a small cut between the skin and the flesh at the tail end.
Hold the skin while sliding the knife between the skin and flesh. Move the knife towards the wider end, keeping it as close to the skin as possible to minimize waste.

7.Check for Bones:
Run your fingers along the flesh to feel for any remaining bones.
Use tweezers to remove any bones you find.

8.Final Touches:
Trim any excess fat or unwanted parts.
Your fish fillet is now ready to be cooked or stored.
Filing fish can be tricky at first, but with practice, it becomes a straightforward task. It's a great skill to have for cooking fresh, tasty seafood dishes.
