Potato Cheese Balls

Crispy on the outside, soft and creamy on the inside, and packed with gooey melted cheese, these Potato Cheese Balls are an irresistible snack or appetizer. They're easy to make with simple ingredients and taste amazing served hot with your favorite dipping sauce.

Ingredients

For the Potato Mixture

4 medium potatoes, boiled and mashed until smooth
1 cup (100 g) shredded mozzarella cheese
½ cup (50 g) shredded cheddar cheese
2 tablespoons cornstarch
2 tablespoons finely chopped fresh cilantro
1 teaspoon minced garlic
½ teaspoon red pepper flakes
½ teaspoon ground black pepper
1 teaspoon salt, or to taste
Small mozzarella cubes for the center, optional

For the Coating

1 cup (100 g) breadcrumbs
2 tablespoons all-purpose flour
3 tablespoons water
Vegetable oil, for frying
Instructions

1. Prepare the potato mixture

Place the mashed potatoes in a large bowl. Add the mozzarella, cheddar, cornstarch, cilantro, garlic, red pepper flakes, black pepper, and salt.

Mix everything together until well combined and easy to shape.

2. Shape the cheese balls

Take a small portion of the potato mixture and flatten it in the palm of your hand.

For an extra gooey center, place a small cube of mozzarella in the middle.

Bring the edges together to completely cover the cheese, then gently roll into a smooth ball.

Repeat with the remaining mixture.

3. Coat the balls

In a small bowl, mix the flour and water until you have a smooth, thin slurry.

Dip each potato ball into the flour mixture, then roll it in the breadcrumbs until completely coated.

4. Chill

Ingredients

For the Mochi Dough

110 g glutinous rice flour
30 g cornstarch
40 g granulated sugar
10 g pumpkin powder
185 ml whole milk
15 g unsalted butter

For the Filling

300 ml (1¼ cups) cold heavy whipping cream
30 g (2½ tablespoons) granulated sugar
Fresh ripe mango, cut into small cubes

For Dusting

Cooked glutinous rice flour or cornstarch, as needed
Instructions

1. Make the mochi mixture

In a microwave-safe bowl, whisk together the glutinous rice flour, cornstarch, sugar, and pumpkin powder.

Gradually pour in the milk while whisking until completely smooth and free of lumps.

For an extra-smooth mochi texture, strain the mixture through a fine-mesh sieve.

2. Cook the mochi dough

Cover the bowl loosely with microwave-safe plastic wrap and poke a few small holes in the top.

Microwave for about 3 minutes, checking and stirring as needed, until the mixture is fully cooked, thick, and slightly translucent.

Alternatively, steam the mixture for 20–30 minutes, until no liquid remains.

3. Add the butter
