Bean Dip for the lazy weekend win!
I just saw this idea on on Instagram, and Kris's enthusiasm for beans made me scamper into the kitchen so I could make it. I changed her recipe just a bit to account for what I had on hand, but it's a keeper any way you do it. I had it in the bowl in 5 minutes. Seriously.
Here's my version. Hightail it into your own kitchen for this, which can be a dip, or I think a sandwich or wrap spread, or even a sauce for pasta or a dressing for salad.
Great Northern Bean Dip
* 1 can (15 oz.) Great Northern beans, drained + rinsed
* 2 tablespoons tahini
* 1 tablespoon fresh lime juice
* 2 tablespoons water
* 1 to 2 garlic cloves (or 1/2 teaspoon garlic powder)
* 1/2 teaspoon apple cider vinegar (or white wine vinegar)
* 1/2 teaspoon ground cumin
* 1/2 teaspoon paprika
* 1/4 teaspoon salt
Add all ingredients to a high-speed blender and blend for a minute or 2, until very smooth. Scrape into a bowl and serve with veggie dippers or corn chips or whatever you like! Can be used as a sandwich or wrap spread, a sauce for pasta or even a dressing for salad or a grain bowl.
Beans for Beings apparently sells her bean dips at farmers markets in San Diego. I'm making a note to myself to seek them out next time I'm in her area!
