Luscious Caramel Pecan Layer Cake
Ingredients:
2 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup unsalted butter, softened
2 cups granulated sugar
4 large eggs
2 teaspoons vanilla extract
1 1/2 cups buttermilk
1 1/2 cups chopped pecans
1 1/2 cups caramel sauce (store-bought or homemade)
Pecan halves for garnish
Directions:
Preheat the oven to 350Β°F (175Β°C). Grease and flour four 8-inch round cake pans.
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
In a large mixing bowl, beat the butter and sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
Fold in the chopped pecans.
Divide the batter evenly among the prepared pans and smooth the tops. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely.
Once the cakes are cool, place one layer on a serving plate. Spread a generous amount of caramel sauce over the top. Place the second layer on top and repeat with more caramel sauce. Continue with the third and fourth layers, spreading caramel sauce between each layer and over the top and sides of the cake.
Garnish the top of the cake with pecan halves. Drizzle additional caramel sauce over the pecans if desired.

β€’ Zest of 1 lime
β€’ 10g gelatin (or 5 sheets)
(If you want it firmer, add 12g)
3) Green lime gelΓ©e (the glossy top)
β€’ 150ml water
β€’ Juice of 1 lime
β€’ 40–50g sugar (adjust sweetness)
β€’ 1 tsp lime syrup or a few drops green food coloring (optional)
β€’ 5g gelatin (2Β½ sheets)
4) Decoration

1) Prepare the base
1. Crush the biscuits.
2. Mix with melted butter.
3. Press firmly into a springform pan (20–22 cm).

Let cool (but not set).
2. Beat cream cheese + sugar until smooth.
3. Add lime zest + juice.
4. In another bowl, whip the cream until soft peaks.
5. Fold whipped cream gently into the cheese mixture.
6. Add the melted gelatin while mixing continuously.
7. Pour over the biscuit base.
8. Refrigerate 3–4 hours.

1. Heat water + sugar + lime juice.
2. Add gelatin and dissolve.
3. Add a few drops of green coloring to get the glossy green.

Ingredients:
1 box butter cake mix

1 can (14 oz) sweetened condensed milk
1 jar (10 oz) butterscotch caramel topping
1 container (8 oz) whipped topping, thawed
Extra pecans and butterscotch chips for garnish
Directions:
Preheat the oven to 350Β°F (175Β°C) and grease a 9x13 inch baking pan.
Prepare the butter cake mix according to the package instructions. Stir in 1 cup chopped pecans and pour into the prepared pan.
Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
While the cake is baking, melt the butter in a pan over medium heat and add the remaining pecans. Cook until toasted, then set aside.

Directions:
Preheat oven to 350Β°F (175Β°C). Line baking sheets with parchment paper.
In a medium bowl, whisk together flour and baking soda.
In the bowl of an electric mixer fitted with the paddle attachment, combine butter with both sugars and beat on medium speed until light and fluffy. Reduce speed to low; add salt, vanilla, and eggs. Beat until well mixed, about 1 minute.
