Creamy Cajun Shrimp Pasta
Ingredients:
- Linguine pasta, cooked
- Medium-sized shrimp, peeled and deveined
- Cajun seasoning blend (for searing the shrimp)
- Red bell pepper, finely diced
- Tomato paste
- Heavy cream
- Oil or butter (for cooking)
- Dried green herbs (like parsley or oregano) for garnish
Instructions:
1. Sear the Shrimp: Toss the shrimp in Cajun seasoning until well coated. Heat a large skillet with a little oil or butter and sear the shrimp until they have a blackened, golden-brown crust and are cooked through. Remove the shrimp from the pan and set them aside.
2. Sauté the Peppers: In the same skillet, add the diced red bell peppers and sauté until they are softened.
3. Build the Sauce: Add a spoonful of thick dark red tomato paste to the peppers and stir. Pour in the liquid heavy cream and mix everything together continuously until it forms a smooth, bubbling, vibrant orange sauce.
4. Toss the Pasta: Add your pre-cooked linguine noodles directly into the bubbling cream sauce. Use tongs to twist and toss the pasta until every noodle is completely submerged and evenly coated in the sauce.
5. Combine and Serve: Add the seared Cajun shrimp back into the pan, nestling them into the saucy pasta. Serve warm on a plate, garnished with a sprinkle of dried green herbs.

Told my husband dinner was low-carb and watched his face fall. Then he ate two of these shrimp and beef stuffed peppers and asked what was in the cheese.
Cheddar melted over the top, an avocado drizzle over that, and nothing on the plate that tasted like a diet.
