Ingredients (Serves 2)
2 ribeye steaks (about 300–350 g / 10–12 oz each)
2 tbsp olive oil
2 tbsp unsalted butter
3 garlic cloves, smashed

1 tsp coarse sea salt
1 tsp freshly ground black pepper

For the Sides
250 g (9 oz) baby potatoes
1 cup cherry tomatoes
1 red onion, sliced
1 tbsp olive oil
Salt and black pepper to taste
Instructions
1. Prepare the Steak
Remove the steaks from the refrigerator 30–40 minutes before cooking. Pat them dry with paper towels, then season generously with salt, black pepper, and smoked paprika.
2. Cook the Potatoes
Boil the baby potatoes for 10–12 minutes until just tender. Drain and lightly crush them. Drizzle with olive oil and roast at 425Β°F (220Β°C) for about 20 minutes, or until golden and crispy.
3. Sear the Steak
Heat a heavy cast-iron skillet over high heat until very hot. Add the olive oil, then place the steaks in the pan. Sear for 3–4 minutes per side for medium-rare, depending on thickness.
4. Add the Butter
Reduce the heat to medium. Add the butter, smashed garlic, rosemary, and thyme. Tilt the pan and continuously spoon the melted butter over the steaks for 1–2 minutes.
