Ingredients:
For the crust:
β’ 1 1/2 cups graham cracker crumbs
β’ 1/3 cup sugar
β’ 6 tbsp melted butter
For the filling:
β’ 1 cup sugar
β’ 1/3 cup cornstarch
β’ 1/2 tsp salt
β’ 4 cups whole milk
β’ 4 large egg yolks
β’ 4 oz bittersweet chocolate, finely chopped
β’ 2 tbsp unsalted butter
β’ 2 tsp vanilla extract
For the topping:
β’ 1 cup heavy whipping cream
β’ 2 tbsp powdered sugar
β’ 1 tsp vanilla extract
Directions:
1. Preheat your oven to 350Β°F (175Β°C).
2. In a medium bowl, mix the graham cracker crumbs, sugar, and melted butter until combined.
3. Press the mixture into a 9-inch pie pan, spreading it evenly on the bottom and up the sides.
4. Bake the crust for 10 minutes. Let it cool completely.
5. In a saucepan, whisk together sugar, cornstarch, and salt. Gradually whisk in the milk.
6. Cook over medium heat, stirring constantly until the mixture thickens and starts to boil.
7. In a separate bowl, lightly beat the egg yolks. Gradually add a small amount of the hot milk mixture to the yolks, stirring constantly.
8. Pour the yolk mixture back into the saucepan. Cook for another 2 minutes, stirring constantly.
9. Remove from heat and stir in the chocolate, butter, and vanilla until smooth.
10. Pour the chocolate filling into the cooled crust. Refrigerate for at least 4 hours or until set.
11. In a large bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
12. Spread the whipped cream over the chilled pie. Garnish with chocolate shaving.
