A bone-in pork chop with a hard sear in butter. No sauce needed, no complicated technique. Just a properly cooked piece of meat.
🍳 CRISPY PAN-FRIED PORK CHOPS
INGREDIENTS
2 bone-in pork chops, at least 1 inch thick
3 tablespoons butter
4 cloves garlic, smashed
Fresh thyme
Salt and pepper
INSTRUCTIONS
Pull your chops out of the fridge 30 minutes before cooking. Cold meat straight into a hot pan cooks unevenly.
Pat them completely dry and season generously with salt and pepper on both sides.
Get your cast iron hot over medium-high. Add butter and let it start to foam.
Lay the chops in and don't touch them for 4 minutes. You want a deep golden crust before you flip.
Flip once. Add garlic and thyme to the pan. Tilt and baste with the butter for the next 3-4 minutes.
Pull them at 140°F internal temp and rest for 5 minutes before cutting.
Thick chops only. Thin pork chops overcook before they get a crust and that's where they get their bad reputation.

Rice is the most underrated ingredient in your kitchen.

A bag costs almost nothing. It keeps forever. And with the right technique it goes from boring side dish to the actual star of the meal.

Here are 6 ways I actually make rice worth eating:
🟥 French Onion Rice — butter, beef broth, French onion soup. Stupid simple, stupid good.
🟥 Souper Rice — cream of chicken + parmesan. Comfort food, zero effort.
🟥 Spanish Rice — fire-roasted tomatoes, cumin, paprika. Better than most restaurants.
🟥 Better Than Takeout Fried Rice — jasmine rice, sesame oil, soy sauce. Make this once and you'll never order it again.
🟥 Dirty Rice — ground pork, Creole seasoning, beef broth. This one hits.
🟥 Homemade Chicken Fried Rice — a pound of chicken, jasmine rice, soy sauce. Weeknight MVP.

Sirloin cubed, cast iron screaming hot, garlic butter basted at the end. This is steak night when you don't want to babysit a whole cut.
🥩 GARLIC BUTTER STEAK BITES
INGREDIENTS
1.5 lbs sirloin steak, cut into 1 inch cubes
4 tablespoons butter
4 cloves garlic, minced
Salt and pepper
Fresh parsley
INSTRUCTIONS
Pat your steak cubes completely dry with paper towels. This is what gets you a crust instead of a steam.
Get your cast iron screaming hot over high heat. No oil yet.
Season the beef generously with salt and pepper right before it hits the pan.
Add a little oil and sear the steak bites in a single layer. Don't crowd the pan. Two minutes without touching them, then flip for one more minute.
Drop heat to medium. Add butter and garlic. Tilt the pan and baste the steak bites with the butter for 60 seconds.
Pull them off the heat, hit with fresh parsley and serve immediately.
Don't skip drying the meat. Wet meat steams. Dry meat crusts. That's the whole difference.

Every. Single. Time.

You're mid-recipe, hands covered in whatever, and you need that one tool. You grab the drawer handle and... nothing. It moves maybe a quarter inch and then just laughs at you.

You wiggle it. You yank it. You do that thing where you try to push everything DOWN through the drawer while pulling.

The potato masher has chosen chaos. The ladle is doing geometry. The box grater is just vibing sideways.

I've started keeping a short list of things I actually need within arm's reach before I start cooking. Sounds obsessive. Saves relationships.

So now every time I set them on the counter, I get THE LOOK.

You know the one. The "I know you see me, and I know you know" look.

Here is an easy salmon recipe they will think you ordered in from UberEATS .

Creamy Tuscan Salmon Skillet. One pan. 30 minutes.

You sear the salmon until it's got that golden crust, pull it out, and build the sauce right in the same pan — garlic, sun-dried tomatoes, heavy cream, Parmesan. The spinach wilts in at the end and then the salmon goes back in to soak up all of it.

The sauce alone is worth making this for. Rich, silky, just enough tang from the sun-dried tomatoes to cut through the cream.

Serve it over pasta. Pour every drop of that sauce on top. Try not to lick the pan.
