My sister's illness has kept me from posting much on this page lately. Plus I pulled out all of my cheat slips over the holidays.

So, it's time to get back on track. Plus I'm needing to find some other lower fat things to eat because my cholesterol is going up. Genetics and higher fat foods are too blame.

I found this over the weekend and decided to try it today. I used ground chicken instead of turkey. I added some submarine sandwich dressing (kind of an herby olive oil) from the deli section at Walmart. I also added some Greek seasoning that I had in the cabinet.

I put mine on a Zero Carb tortilla from Aldi. I'm sure mine cooked longer than he said. I didn't want to bite into raw chicken.

Verdict: Very tasty! I will do this again. I'll add some banana peppers and maybe pickled red onions next time. I don't like tzaiki sauce, so I didn't have any kind of dip.

It's been a very hectic month with my sister's major illness and hospitalizations. I finally had enough time (and mental clarity) to cook could of things tonight. I brought out a couple of our favorites: Spaghetti squash with feta & tomatoes in an Italian seasoning and some stuffed Bratwursts (cream cheese, peppers, onions, Worcestershire, seasoning, and cheese).

Now we have supper options for a few days.

It's been a bit since I've posted anything. Y'all....I could just eat the Carbquick biscuits dipped in that sauce for days and days. John can have the chicken. 😉 I also made a pepper jack cauliflower dish (pics in comments). I have to really limit myself on those biscuits, even though it's a keto recipe.

This dish is Mississippi Chicken (chicken breasts, au jus packet, ranch packet, 16 oz jar of pepperoncinis, and half a stick of butter). I made it in my instant pot, but you can do it in a crock pot.

The biscuits are made using Carbquick.

Chili dogs, anyone?! Yes, you can have chili dogs and stay low carb! This whole meal is about 7 net carbs.

Nathan's hot dogs have the lowest carb count that I've found (1 gram), AND they are DELICIOUS!

I wrapped a La Banderita 4 net carb tortilla around a grilled Nathan's dog and topped with some of my keto chili and Colby jack cheese. I baked it in the oven, and I'd never know it wasn't a low carb dish! (I could've also just used a 0 net carb Lewis hot dog bun, but I just really wanted the tortilla so it could be like a hot dog enchilada. 😉)

Friday night... fish night. I baked some swai fillets, three with Jamaican Jerk seasoning and three with Greek seasoning. I decided to finally try this cabbage casserole, and it's so good! I had leftover veggies from earlier in the week. The cabbage recipe is pictured below.

John added some bacon crumbles to his, and I added some Spicy Dannos. I used cream of mushroom since I didn't have cream of chicken. I used a small head of cabbage and a medium yellow onion, and it filled up a 9x11 casserole dish. I used maybe a third of a bag of plain pork rinds that I smashed up (so maybe 1/2 cup of crushed).

The recipe app I use is Recipe Keeper. There's a free version, but I paid around $7 for it. Best money I ever spent!

I regret all of the years that I didn't eat vegetables! What a delicious and tangy supper we had tonight (and will have again tomorrow).

I marinated squash, red & green bell peppers, and red onion in the marinade (in photo below).

Yesterday I put 2 large chicken breasts in the crockpot with a can of cream of mushroom soup (not as low carb as I prefer) and a half bottle of a garlic parmesan wing sauce (I think it's Buffalo Wild Wings brand). I also baked a block of feta cheese with some cherry tomatoes, olive oil, and Italian seasoning. The chicken was served over the feta mixture.

It's so hard to not eat ridiculous amounts of that chicken & feta mixture!!!! DELICIOUS!!!!!!

Tonight I made easy chicken quesadillas, but I had mine without the tortilla. I used 2 cans of chicken that I marinated in low carb Mexican spices with some water, olive oil, half a can of salsa verde, and half a can of green chilies. In another containeri mixed the same seasonings with some cut up steak... using the remainderof the green chilies & salsa verde. I added some jalapeños to the beef mixture. I warmed up the chicken mixture in the skillet and then the beef mixture.

My plate is a whole smashed up avocado mixed with some of the chicken mixture, sour cream, and cheese.

John's quesadillas are made of the La Banderita 4 net carb tortillas with the chicken & beef mixtures and cheese. I used some of the leftover broth to help season the tortillas to give them an extra boost of flavor.

The "chips" are 0 net carb tortillas that I cut into pieces and fried in avocado oil. I seasoned them with Nacho cheese popcorn flavoring. I added some jalapeño juice and cumin to the store bought queso to add more flavor. The "chips" are DELICIOUS and ZERO guilt!

So so good.

I made one of my favorites tonight for supper. I could eat the gravy like soup. 😋 I double the recipe for the gravy because it's so good. (I made my bacon in the oven instead of the Instant Pot.) I used six boneless pork chops.

We also had slaw and okra. The okra was seasoned with olive oil and salt & pepper and air-fried.

A delicious and savory (spicy) side dish... jalapeno poppers. (We like seeds in our cheese mixture for a little extra heat.) I like to keep the cream cheese mixture made up and a few jalapeños halved for nights when I don't feel like cooking a big supper. Just load them up with the cream cheese mixture (cream cheese, cheddar, onion & garlic powder,salt & pepper) and top with some bacon bits. Bake on 400 for about 15 minutes.

They go well with the BBQ chicken casserole leftovers from a few nights ago. John can take the leftovers to work for a couple of days. So good!

Parchment paper is key to preventing a giant mess of cream cheese mixture flowing off the pan. Plus it keeps the pan clean, so there's no washing needed.

This plate of food looks and tastes like summer!

Last night I cut up the veggies and the chicken. I put the chicken in a garlic parmesan marinade and the veggies in the marinade that's shown in the last picture.

The veggies would've been good on skewers, but I don't have any. So I just lined a grill pan with foil and grilled them. Because of John's tomato allergy, I made them separately. Poured the rest of the marinade over them and baked in the oven. I made a double batch of marinade.

The chaffle is just cheese, egg, some ranch, jalapeños, and bacon crumbles.
