10 minute Tuna Sushi Bowl with 38g protein & 9g fiber! This is perfect for meal prep and for when you need a quick lunch or dinner with little effort. The Creamy Sesame sauce pairs SO well with the ingredients in this dish - it’s tangy, sweet, and oh so delicious. They’re now available at Harris Teeter so I decided to grab all 4 flavors while I was there! These sauces are so versatile as they can also be used as dressings, dips and marinades. I love the clean ingredients and the fact that they are gluten & dairy free 😍
What you need:
1 can tuna (I like )
1/2 cup cooked white rice
Chopped cucumber
Matchstick carrots
Avocado
Edamame
Creamy Sesame
Sesame seeds
Combine all ingredients in a bowl and drizzle with the dressing and a sprinkling of sesame seeds. Enjoy!!

These GREEK TURKEY MEATBALLS are incredible and so easy. I like to bump up the protein and lessen the fat content by using regular tzatziki, but there is a dairy free version in the book! Servings: 12 meatballs
Prep time: 10 minutes
Cook time: 10 minutes

1 lb ground turkey
1 egg
1 cup finely chopped fresh spinach
2 cloves minced garlic
1/4 cup finely diced red onion
1/3 cup almond flour
1 tbsp coconut aminos
1 tbsp dried parsley flakes
1 tsp dried oregano
1 tsp dried thyme
3/4 tsp salt
Avocado oil spray

Tzatziki Sauce:
1/2 cup full fat coconut milk or almond milk
1/2 cup mayonnaise
1 tbsp lemon juice
2 cloves minced garlic
2 tbsp fresh chopped dill
3/4 cup peeled and diced cucumber
1/2 tsp red wine vinegar
1/2 tsp dried oregano
1/4 tsp sea salt

Combine the meatball ingredients in a bowl and mix to combine using your hands. Do not over mix. Roll the meat mixture into 12 golfball size balls.
Preheat air fryer to 400 for 3 minutes. Spray the basket, then add the meatballs. Lightly spray the meatballs.
Air fry for 5 minutes, then flip and cook for an additional 5 minutes.
Serve in a bowl with cucumbers, tomatoes, spinach, olives, and pickled red onions and drizzle with the tzatziki.

Cooking tips:
To make this nut free, sub 2 tbsp coconut flour for the almond flour.
Work in batches if necessary. You want the meatballs to be in a single layer and not overlapping.
Sub plain, non-fat Greek yogurt for the mayonnaise for a lower fat option.
Dipping your hands into a bowl of water after rolling each meatball helps prevent sticking!
To bake these in the oven, preheat to 400 and line a baking sheet with parchment paper. Add the meatballs in a single layer on the baking sheet, then bake for 18-20 minutes until cooked through.

CHICKEN PHILLY CHEESESTEAK MEAL PREP BOWLS - takes 15 mins from start to finish and has 33g protein per serving 😍 All you need is ground chicken, peppers, mushrooms, onions, spices, rice and some cheese! Feel free to use dairy free shreds if preferred.

4-INGREDIENT COCONUT DATE BALLS! These are packed with protein, fiber and healthy fats. As a busy mom of 3, this is the perfect snack to keep me energized in between running my kids around to all of their sports and activities! I grabbed all of these ingredients from . These are so easy to make and perfect to store in the fridge for whenever you’re craving a sweet treat.
Ingredients:
6 oz can Blue Diamond Lightly Salted Almonds
10 large pitted medjool dates
2 tbsp flaxseed meal
1/2 cup unsweetened shredded coconut
Soak the dates in warm water for 15 minutes. Drain and add to a food processor along with the almonds and flaxseed meal. Pulse for about 30 seconds until you have a sticky dough. Roll into 1-inch balls and then roll in coconut. All done! Store in the fridge.

VEGGIE TUNA PASTA SALAD made in partnership with my all-time favorite pasta brand: ! I used their Farfalle bowtie pasta + fresh veggies & tuna tossed in a creamy homemade tangy dressing. This is perfect for meal prep!
Brown Rice Pasta is crafted in Italy in a dedicated gluten free facility and is also certified gluten free by GFCO. It truly is the best tasting gluten free pasta out there. The taste and texture are on point and I do not feel like I’m missing out on anything having Celiac disease!

THAI-INSPIRED TURKEY BURGERS with Cilantro Lime Slaw and Tangy Peanut Sauce 😍 Grilling season is upon us and this is such a great one to start with! So much flavor bursting in every bite! Recipe 👇🏻
Makes 4 burgers:
1 lb ground turkey
1 tsp Thai Red Curry Paste
1 green onion, quartered and diced fine
2 cloves garlic, minced
2 tbsp chopped fresh basil
1 jalapeno, seeded and diced fine
1 tbsp coconut aminos
1 tsp ground ginger
1 tsp curry powder
2 tsp lime zest
3/4 tsp salt
4 gluten free burger buns (or lettuce for lettuce wraps if preferred)

Slaw:
1 cup shredded purple cabbage
1 cup matchstick carrots
2 tbsp lime juice
2 tbsp fresh chopped cilantro
1 tbsp coconut aminos
1 tbsp olive oil
1/4 tsp salt

Peanut sauce:
1/2 cup natural creamy peanut butter or almond butter
3 tbsp coconut aminos
2 tbsp rice vinegar
2 tbsp lime juice
1 tsp garlic powder
1 tsp powdered ginger
1 tbsp of water at a time until desired consistency is reached

Directions:

Combine the turkey burger ingredients in a bowl and mix well using your hands. Form the mixture into 4 burger patties, about 3 inches wide and 1 inch thick. Place the patties on a plate in the fridge while you make the slaw and sauce.

Add the slaw ingredients to a bowl and mix well.

Add the peanut sauce ingredients to a bowl and whisk until combined. If the sauce is too thick, add a tsp of water at a time as you whisk until it reaches your desired consistency.

Heat your grill over medium high heat. Make sure the grates are well greased/oiled so the turkey doesn’t stick. Cook the patties for 4-5 minutes on each side, until the internal temperature reaches 165 degrees.

Serve the burgers on a toasted gluten free bun with some of the peanut sauce and the slaw on top! Enjoy!
