This is a truly easy recipe that can be served for breakfast or lunch/dinner. I call it Grit Casserole (original, huh?) and really the sky's the limit with what you can add to this. I like my grits to keep their Southernness (is that a word?) no matter what I add. Some of my suggestions are diced pancetta or bacon, cheese (cheddar works, but Gruyere adds a little pizzazz. Unsalted butter, an egg or two depending on how many grits you used. Note! - remember to sauté the things you want to add like meats, veggies, etc., before mixing into the casserole. And don't be afraid to pour some of the grease into the casserole for flavor. The grits should be cooked prior as well. Bake at 350 for about 25-30 minutes until firm in the center.
