My GreenStalks don’t necessarily have anything to do with this post, but they’re pretty ☺️

I have been stirring a ton on building community lately. Community sufficiency has become quite paramount for us. I think prior to the last maybe 2ish years, we always kind of had a self-sufficiency mindset.

It took us a while to feel like we belonged where we are now, but now - almost daily - we have friends and neighbors stopping in all the time just to chat, to barter goods, or to simply have some coffee together on the porch.

I’m thankful for the freedom to enjoy those drop ins, and I am also super thankful to have people in our life that care about our family.

Leaving both sets of parents behind in Lancaster, as well as a lifetime of friendships, was not easy at all.

It’s funny when I think about it because if we didn’t have goats, we may have never met our local farmer, who is one of our best friends now. If we didn’t make tallow balm, we may have never met the couple who we refer to as another set of grandparents to our kids. Had we not put our homemade KitchenAid repair sign in the yard, we may have never met our very reliable seamstress, as well as so many other local foodies. Had we not started the bakery, we would not have connected with so many people interested in buying locally sourced and made real food. Had we not started raising pigs, we would not have met like-minded families with kids of similar ages to ours who have become wonderful friends.

The list of things that seemed insignificant when they started and turned out to be hugely significant could go on forever.

I hope that if you are in a season of trying to find like-minded community, that you have the courage to put yourself out there and find those people. It’s so intimidating to put your hand out and shake it with a stranger when you are the transplant and new to town, but you never know what that handshake might grow into.

Thank you all for your ice cream maker suggestions! We wound up going with Ashlee Johnson’s Cuisinart 1.5qt recommendation that was just under $70. 

The first flavor that we made was chocolate strawberry pie. The flavor was fantastic! We had a little bit of ice crystal texture, which I’m thinking can be attributed to the ice buildup that we had on the frozen strawberries. Note to self: either use my home canned strawberries, or completely thaw and drain the frozen strawberries first. I may also tweak the cream to milk ratio and the sugar content a little bit.

We are super excited to continue to play with this machine as we work towards a velvety texture. We did a custard base, so I’m very much leaning towards the strawberries were our problem. Stay tuned! 

Also thanks to Curvin Groff for carrying good quality, raw milk, and heavy cream, and thanks to our chickens for giving us delicious eggs!

As I prep cookie dough this morning in mass, I want to encourage you to not let “the market is too saturated” thoughts to stop you from taking on what you’ve been dreaming of doing, whether that’s raising animals, baking bread, honing a craft, or whatever it might be.

For one, you will feel so satisfied by doing something with your hands, creating instead of consuming, and curating a life with more freedom. If a door closes, it’s almost always for good reason, and another open door follows.

For two, and I want you to hear me here, your homemade sandwich is not like the next food truck, your crocheted hat is not like the other artist, your beef doesn’t taste the same as the other farmer. There is room in the market for you.

As an example, there are 40K+ people in our county. Let’s say given the current climate of my family (running a multi faceted business, raising animals and preserving food, 3 kids 6 and under plus a teenager, etc) that I’m comfortable baking 100 loaves per week plus extra goodies.

You’re hearing that number, right? I could NEVER expand my bandwidth far enough to make bread for every family in my county that wants to buy homemade quality bread, even if only a QUARTER of my county even wanted to buy such bread each week.

So - take scary leaps. Fail. Succeed. Start over. Press on. Do the things you love as often as you can because if you’re living what feels like a shackled life to you and you don’t want to, you’re wasting precious time.

We made a huge cheese steak tonight for us and the little kids. It’s got chipped steak from Breezy Acres with mozzarella a friend made with their goats’ milk and green onions from them, as well as our homemade pickled red onions. The bread is garlic herb focaccia sliced in half 😍

So. Close. It’s been a slow move to the 100s, but I’m chipping away. I’m enjoying life. I’m having treats I love. I’m nourishing my body. I’m trying to find balance. I’m building muscle. I’m increasing my quality of life.

Reporting back about my probiotic lemonade experiment. It’s AMAZING.

Here is my process:
1.5 quarts water
1 cup whey
1 cup lemon juice
1/3 cup sugar

Mix well. Sit on counter with lid for 3 days. Fridge, and enjoy!
