Jamaican ๐ฏ๐ฒ Gratercake Recipe
Ingredients:
- 2 medium-sized coconuts (or pre-grated unsweetened coconut)
- 3 cups sugar
- Grater (if using fresh coconut)
- Fresh ginger (to taste)
- 1 cup water
- Large cooking spoon (for mixing)
- Thick saucepan
- Lemon (optional)
- Pinch of salt (Optional)
- Almond essence (optional)
- Red food coloring
- Cherry essence (optional, as an alternative to almond essence)
Instructions:
1. Prepare the Coconut:
- If using fresh coconuts, open them and remove the brown outer shell, peel the brown part off leaving just the white flesh. Grate the white coconut using a grater.
- Alternatively, you can use pre-grated boxed unsweetened for convenience.
2. Cook the Sugar Mixture:
- Place a thick saucepan on high heat and add 1 cup of water.
- Stir in 2 cups of sugar and mix until the sugar dissolves and the mixture begins to simmer. Be careful not to burn it.
3. Add the Coconut:
- Add the grated coconut (fresh or pregrated unsweetened to the simmered sugar in saucepan and stir until the mixture thickens.
4. Layer the Gratercake:
- On a baking tray, spread half of the thickened coconut mixture evenly.
- In the remaining coconut in the pot, add red food coloring and mix until the color is uniform.
- Add the red coconut mixture over the white layer on the baking tray and spread it out evenly.
5. Chill:
- Allow the gratercake to set in the refrigerator for about 2 hours or overnight.
6. Serve:
- Once set, cut the gratercake into medium-sized chunks and enjoy!
Feel free to add lemon juice, a pinch of salt, almond essence, or cherry essence to enhance the flavor!
