This Steak Has a Problem!
Luckily, we can fix that with the reverse sear method and the thermometer.
Salt the steak generously well in advance.
Insert the core temperature probe.
Cook the steak at 120°C / 250°F over indirect heat. Depending on the thickness and starting temperature of the steak, this will take about an hour.
When the core temperature reaches 52°C / 126°F, take the steak off the grill and let it rest.
Fire up the BBQ until it’s very hot and sear the steak until it has a beautiful crispy crust.
