We made breakfast for dinner in Cooking Club this week: half-whole wheat pancakes with a juniper cream sauce, topped with blueberries and pine nuts.

POV: your holiday weekend plans are rained out so you decide to stay in and cook with juniper berries.

Juniper berries have a pleasant, slightly sweet flavor with a piney-floral aroma. So they’re ready to comfort you when your “summer kickoff” will be cold and rainy.

Fun fact: Botanically, juniper berries are actually the cone (not a berry!) from a juniper tree or bush.

Good juniper berries should still be fresh enough to be smashable with a fork, kind of like raisins. The flavor and aroma are on the inside, so crushing them slightly before you cook with them will help bring out all the flavor.

This month’s livestream class is exploring cooking with juniper berries. They have a slightly floral profile with a hint of pine. They’re perfect for both savory and sophisticated sweet dishes, especially if you know how to work with them.

In this class we’ll use juniper berries to make a juniper cream sauce, then we’ll serve that sauce over half-whole wheat pancakes topped with blueberries and pine nuts. It’s a nourishing savory-sweet combination perfect for breakfast at dinner time (or heck, just breakfast).

We’ll explore juniper berries’ complex flavor profile, how to avoid the astringency or bitterness that can sometimes arise when not handled properly, and other dos and don’ts for cooking with them.

I changed my mind.

Bc it’s ☀️97 degrees this week then 🥶🌧️ by Saturday, so here’s what you do -

You get yourself some asparagus and you make this dish. Because it’s room temp on a hot day *and* those preserved lemons will brighten your spirits on a holiday weekend threatening to ruin your plans with rain.

And then you get yourself some juniper berries so you can drizzle this sauce over your waffles. And maybe you sit yourself on the couch and binge Something Very Bad because your husband is probably right and with good breakfast carbs you can muster the courage for just about anything.

And then you make these frozen Aleppo-chocolate pops. Because it’s a hot day in season no matter how much liquid will fall from the sky by Saturday.

So… why would the universe subject you to fiery torment during the work week, then rain all over your holiday weekend?

No idea.

But someday soon it will be perfect grilling weather. I promise. A nice breeze, a cold beer and grill marks on protein.

We’ll get through this together.

Can’t smell anything?

Listen, life is too short to hang into those sad tired spices from the past.

There’s a big, beautiful world of springtime deliciousness out there! Time to move on.

We’ll do this together. Take a deep breath and say it with me:

Goodbye old spices, and thank you for everything.

You were lovely once, but I need more flavor in my life.

It’s not you, it’s me. (Actually, it’s totally you).
