Dinner tonight was BBQ Pulled Chicken Nachos with Ranch Coleslaw..... I told the Hubs that this pic is s***k bank for me 🤣 The food, his sexy long fingers, the cut up knuckle that he got at work, and the blurred beard in the background.... 🤣🫠

I put on my big girl pants today and I'm disassembling minor parts of the smoker so I can clean it out. Last time I did a cook, I started getting smoke in the hopper and I want to prevent a backfire. So I'm removing the chimney cap and scrubbing the s**t out of this baby.

Earlier I looked all pretty and stuff....as Natalie would say "tuff" because I had on my black jersey, black jeans, and black and red Nikes to go grocery shopping but the second I got home, I chose to be a hot mess 🤣🫠

I tried these chicken nuggets today with some Buffalo Wild Wings sauces. The nuggets were really good and reminded me of McDonald's, and it was $10 for 5 lbs at Costco. The sauces were good, I've already had the Honey BBQ but I was trying the Garlic Parmesan to possibly using it in a lunch wrap or pita. It's a little strong so I just cut it with mayo and it was perfect. 😋

As always, good food and horror movies 🙌 This is Spinach and Tomato Pasta. Here's the recipe!

Spinach and Tomato Pasta

1 box penne, shells, or bowties
1/2 chopped onion
4 cloves garlic, chopped
2 T cornstarch
3 C milk
1/4 C grated Parmesan cheese
3/4 t salt
1/2 t pepper
1 T dried basil
2 C diced tomatoes
1 C chopped fresh spinach
6 oz cheddar
6 oz reduced fat velveeta

Cook pasta according to package.
Saute the onion and garlic. Whisk cornstarch into milk, pour into veggies and simmer a few minutes to thicken. Stir in parmesan and seasonings. Add the tomatoes, and spinach. Simmer until flavors are well blended. Stir in cheddar until melted. Add pasta and serve.

I didn't have cheddar so I used mozzarella this time and wow that was good too. It's one my more cost friendly meals and only takes like 30 minutes or so. Definitely let me know if you try it!

STORY TIME! 🙌

We've always decorated with Christmas lights and garland around the living room and kitchen, and set up our Christmas tree in October. The lights are wifi and we change the color to orange and decorate the tree with Halloween decorations. We redecorate in November and then in December.

Anyway, Natalie was 11 months old for her 1st Christmas. The next October, I was putting up the lights and she just kept watching me closely. She was already talking a bit at this point but I noticed she kept mumbling something. Turns out she was mumbling "Ho ho ho" to herself 🤣😍 I didn't think she would remember but apparently it made a big impression on her!

I forgot to post dinner last night! We still a little bit of the taco meat and refried beans, so I made Enchilada Pasta!

I made a roux with 1/4 cup of butter and 1/4 cup flour. Whisked in 2 cups of milk and 1/2 cup of enchilada sauce. Once it barely starts to thicken, I add the meat and beans. It's about 1 lb of the taco meat and roughly 1 can of beans. Usually I do whole pinto beans but I had already refried these for on nachos and crunchwraps. Once it's all hot and mixed up well, I stir in about 12 oz of shredded cheese.

I got the idea from Hamburger Helper but made it homemade. I drizzle warm nacho cheese on top and obviously drizzled some on the steamed butter and herb broccoli to tie it all together.

My lunch today... Scrambled eggs with spinach, cherry tomatoes and cheese in a warm pita pocket. When the eggs were about halfway done, I moved them to the side of the pan and added the spinach and tomatoes to the other side and steamed them until warm before mixing them into the eggs. It turned out really well and the tomatoes were perfect 😋🙌
