The ones that grow in the deep south and have Spanish moss swaying from their branches. My favorite memories as a child are the ones of long winding roads with oaks lining the path and wondering what adventure lies beyond the next turn. They are mysterious and magical with Spanish moss blowing in the wind. The trees are bold and alive, their presence so strong yet generous. The tree in the logo is

an actual tree on my family farm! The sassy part comes from the fact that I may have been told a time or two (ok...maybe a thousand) that I'm a bit sassy. ☺So now you know how The Sassy Oak got its name...classy, a little bit sassy, and a whole lot of Southern.

Looking back at May and realizing it was filled with so many of the things I love most.

From bucket list adventures in Sedona and Antelope Canyon to beautiful red rock views that left me speechless. From fresh flowers on the counter and peonies gathered from the garden to creating simple home decor moments that made everyday life feel a little more special.

There were easy entertaining ideas, peach crostini recipes, thoughtful gift baskets for the people I love, fashion finds I couldn’t wait to wear, and plenty of sunshine in between.

One thing I’ve learned is that life isn’t made up only of the big milestones. It’s the fresh flowers, the shared meals, the weekend adventures, the thoughtful gifts, the laughter around the table, and the little moments that become the memories we treasure most.

May was a beautiful reminder to celebrate it all.

I’ve shared a lot of pasta salad recipes over the years, but this one? Hands down the BEST yet. It’s fresh, bright, packed with flavor, and gets even better after sitting overnight in the fridge. Perfect for cookouts, pool days, lake weekends, or honestly just eating straight from the bowl standing at the fridge.

Save this one because you’re going to want it on repeat all summer long!

🥗 Orzo Pasta Salad

1 1/2 cups uncooked orzo pasta, cooked, drained, & rinsed
1 red bell pepper, finely chopped
1 orange bell pepper, finely chopped
1 english cucumber, finely chopped
1 small red onion, finely chopped
1 cup corn, fresh or frozen
1/3 cup fresh basil, chopped
1/4 cup fresh parsley, chopped

✨ Lemon Herb Dressing

1/4 cup olive oil
3 tablespoon red wine vinegar
2 tablespoon lemon juice, roughly half a lemon
2 tablespoon Dijon mustard
2 cloves minced garlic
1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon black pepper

Mix together all ingredients above and pour the lemon herb dressing on top. Let sit overnight in the fridge so all the flavors can marinate together.

Seriously… THIS is what summer tastes like. Fresh, colorful, crunchy, and so delicious. If you make it, come back and tell me what you think!
