Our trip to Poland was amazing! 🇵🇱❤️

We spent so much quality time with family and traveled across the country—from the beautiful mountains to the Baltic Sea. We also picked up a few viruses along the way 🤧, but that didn’t stop us from making wonderful memories. It just took us a little time to settle back in after returning home.

Now, summer is finally here! ☀️

Homemade kopytka with a cheesy twist 🥔✨
Simple ingredients, messy hands, and the best kind of memories.

As promised, recipe below 👇

🥔 Simple Kopytka (Potato Dumplings) with Farmer Cheese

Soft, tender dumplings you can serve sweet or savory.

🛒 Ingredients
2 cups mashed potatoes (cooled, smooth)
1 cup farmer cheese (crumbled)
1 egg
1–1½ cups gluten free flour (I’ve got my go-to flour in my Amazon store)
Pinch of salt
👩‍🍳 Instructions

1. Make the dough
Mix potatoes, farmer cheese, egg, and salt.
Add flour gradually until you get a soft, slightly sticky dough.

2. Shape
Roll into ropes on a floured surface and cut into small pieces (classic kopytka shape).

3. Cook
Boil in salted water. Once they float, cook 1–2 minutes more, then remove.

🔥 Serve your way
Sweet (like I made): butter + sprinkle of sugar (I use coconut sugar—linked in my Amazon store) 🤍
Savory: perfect as a side with meat or sautéed veggies
Optional: pan-fry in butter until golden for extra flavor

Since I won’t be baking for the next month, I’ll still be hanging out on Facebook—sharing delicious photos of my baked goods, planning my June bake sale, posting simple recipes, and linking my favorite finds from my Amazon store.

Today, let’s talk about toast.

Every gluten-free kitchen needs at least one toaster. After 16 years on my celiac journey, I can confidently say—I’ve become a bit of a toaster expert. I’ve gone through many models, and my favorite by far is a toaster oven combo.

I use it at least once or twice every single day. Yes, it takes up a bit more space, but it’s absolutely worth it. You can toast bread while warming pizza, heat buns, crisp up waffles, or even warm a tortilla—all at the same time. It just makes gluten-free life easier.

If you’re just starting out, you can also find a smaller toaster on my beginner list—one with wider slots that’s perfect for gluten-free bread and great for warming waffles too.
