Pesto Pasta Bake 🍝🌿
Ingredients:
8 oz pasta (such as penne or rotini)
1 cup prepared pesto sauce
1/2 cup ricotta cheese
1/2 cup grated Parmesan cheese
1 1/2 cups shredded mozzarella cheese
1/2 cup cherry tomatoes, halved
1/4 cup breadcrumbs
1 tablespoon olive oil
Salt and pepper to taste
Directions:
Preheat your oven to 375°F (190°C) and grease a baking dish.
Cook the pasta according to package instructions until al dente. Drain and return the pasta to the pot.
Stir in the pesto sauce, ricotta cheese, and half of the grated Parmesan cheese. Season with salt and pepper to taste.
Pour the pasta mixture into the prepared baking dish. Sprinkle the shredded mozzarella cheese and cherry tomatoes evenly over the top.
In a small bowl, mix together the breadcrumbs, remaining Parmesan cheese, and olive oil. Sprinkle the breadcrumb mixture over the top of the pasta.
Bake for 20-25 minutes, or until the cheese is melted and bubbly, and the breadcrumbs are golden brown.
Let the pasta bake cool slightly before serving.

Total Time: 40 minutes
