BACON WRAPPED CREAM CHEESE STUFFED CHICKEN BREAST
Ingredients
2 Boneless skinless chicken breast
4 tablespoons cream cheese
1/4 cup Pepperjack cheese, shredded
2 tablespoons green onion, chopped
4 to 8 pieces of bacon
Instructions
Cut chicken into 4 equal size pieces. Pound breast so it is about 1/4″ thick.
Mix together softened cream cheese, chopped green onions and shredded pepperjack cheese. Put 1/4 of this mixture into the middle of each piece of chicken.
Starting at the long side, roll chicken breast up, keeping the cheese mixture to the middle.
Wrap 1 to 2 slices of bacon around the chicken breast, secure with toothpick, if needed.
One piece of bacon wrapped around each breast is enough. But 2 pieces of bacon for each breast fully wraps the chicken and is outstanding.
Place on baking sheet and back for 30 minutes at 375 degrees F.
Broil topside for about 5 minutes to fully brown and crisp bacon. Turn each breast over and broil for another 3 minutes or so to crisp up the bottom side

Keto broccoli chicken cheese casserole😋
INGREDİENTS
1 pound broccoli cut into florets
1 rotisserie chicken meat shredded
8 ounces cream cheese
3/4 cup heavy cream
1/2 cup unsweetened almond milk
1 tablespoon dijon mustard
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper ground
1/4 cup fresh basil chopped
1 cup cheddar cheese shredded
INSTRUCTİONS
Preheat your oven to 200C/390F.
Place a saucepan of water over high heat and boil the broccoli florets until al dente. Drain well and add to a large mixing bowl along with the shredded chicken.
In a small saucepan, add the cream cheese, cream, almond milk, mustard, garlic, salt and pepper and place over low heat. Whisk until the sauce is smooth.
Pour the warm sauce into the broccoli and chicken mixture, add the basil, and mix well.
Pour the mixture into a casserole dish and top with the shredded cheese.
Bake in the oven for 20-30 minutes, until warmed through and the cheese has browned.
Serve immediately.

This is really a great recipe of you make it exactly the way it’s written. I eat it like sandwiches, BLT, grilled cheese, or when you’re craving something sweet with butter and Keto raspberry or strawberry jam 😋

Just made “noodles” for my spaghetti night! Cutting them towards the end always gets a little crazy but it is so good! 40lbs down and feeling good. For anyone that wants the noodle recipe:
4 eggs
3 tbsp cream cheese
2 tsp garlic powder
Preheat over to 350
Beat all three ingredients together in a blender.
Put parchment paper on rimmed cookie sheet.
Pour mixture on parchment paper and bake for 12 minutes. Cut to make your “noodles”

Low carb/keto “loaded cauliflower” soup from my amazing friend Jessica!
Made in an instant pot but could easily be done on a stove top just cook until the cauliflower is super tender.
1/2 sweet onion chopped small
2 TBS butter
Sauté the onions in the butter
Add one bag chopped cauliflower florets
Add 3 cups chicken stock
1 tsp garlic powder
1 tsp Himalayan salt
Seal in the instant pot
Cook on HIGH PRESSURE for 5 minutes then release.
Once done use an immersion blender or add to a food processor (make sure the cauliflower is super soft) and blend til smooth
Add 4 oz cubed cream cheese and 1 cup shredded cheddar and start to “melt”.
Return cauliflower and stock to instant pot and allow the cheese to melt completely.
Add 1/2 cup heavy cream.
Top with bacon, onion, cheese, sour cream... anything you want!!

Pepper Jack Crockpot Cauliflower 🧡😋
1 LB cauliflower cut into 1 inch florets
4 oz cream cheese
¼ C whipping cream
2 T butter
1 t salt
½ t pepper
1 t garlic powder
4 oz Pepper Jack cheese shredded
6 slices bacon cooked crisp and crumbled
Instructions
Grease the inside of a 4 to 6 quart slow cooker.
Add the cauliflower, cream cheese, whipping cream, butter, salt, and pepper. Cook on low for 3 hours.
Add the Pepper Jack and stir to combine. Continue to cook another 30 minutes to an hour, until cauliflower is fork tender.
Add bacon crumbles and serve.

INGREDIENTS
1 1/2 pounds chicken breast, cut into tenders sized pieces
6 cloves garlic, minced
6 tablespoons butter, divided
3/4 cup chicken stock
1 cup heavy cream
1/2 cup finely grated Parmesan cheese
6 ounces mixed bell peppers (red, yellow, orange, green), sliced
1 small red onion, thinly sliced
1 teaspoon dried Italian Seasoning (I use this brand)
1/2 teaspoon crushed red pepper flakes
sea salt and black pepper, to taste
freshly shredded parmesan cheese, for serving and garnish
finely chopped fresh parsley, for garnish

I made a thing! I NEVER cook! This time I cooked for 5. Showing my Friends that keto can be tasty
The recipe is as follows:
4 eggs, a pound of cooked pork sausage, sharp cheddar cheese, Swiss cheese, cup of onion and bell pepper sautéed, garlic powder, 16 ounces sour cream salt and pepper. Mix it all together and Cook in oven at 325 degrees in either a glass dish or, I used a tart pan with removeable bottom. Voila!

One day..when I reach my goal weight... Someone is going to say "You're so skinny, how'd you do it?" My response will be
"Keto Pancakes"
Recipe
1/2 cup plus 1 tbsp almond flour (60g)
1/2 cup full fat cream cheese (125g)
4 eggs
1/2 tsp cinnamon
1 tsp granulated sweetener (optional)
butter for frying
Instructions
Mix all ingredients in a blender.
Fry pancakes in melted butter in a non-stick pan over a medium heat. Turn over once the centre begins to bubble. The pancakes should be smallish, ca 10-12 cm in diameter. About the right size to fit them in the toaster the next day should you be so lucky to have any leftovers
