Pistachio Raspberry New York Rolls
Ingredients:
For the dough:
3 1/2 cups all-purpose flour
1/4 cup granulated sugar
2 1/4 teaspoons active dry yeast
1 teaspoon salt
1 cup whole milk, warmed
1/4 cup unsalted butter, melted
1 large egg
For the filling:
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup ground pistachios
1/2 cup raspberry jam
For the glaze:
1 cup powdered sugar
2 tablespoons milk
1/4 teaspoon vanilla extract
1/4 cup chopped pistachios
Instructions:
Prepare the Dough:
In a large bowl, combine the flour, sugar, yeast, and salt.
Add the warmed milk, melted butter, and egg to the dry ingredients. Mix until a dough forms.
Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic.
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1-2 hours, or until doubled in size.
Prepare the Filling:
In a small bowl, mix together the softened butter, granulated sugar, and ground pistachios until well combined.
Assemble the Rolls:
Once the dough has risen, roll it out on a floured surface into a large rectangle, about 1/4-inch thick.
Spread the pistachio butter mixture evenly over the dough, leaving a small border around the edges.
Spread the raspberry jam over the pistachio butter layer.
Starting from the long side, tightly roll up the dough into a log.
Cut the log into 12 equal pieces and place them cut-side up in a greased baking dish.
Second Rise:
Cover the rolls with a damp cloth and let them rise in a warm place for about 30-45 minutes, or until puffed up.
Bake:
Preheat your oven to 350°F (175°C).
Bake the rolls in the preheated oven for about 25-30 minutes, or until golden brown and cooked through.
Prepare the Glaze:
In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth.
Drizzle the glaze over the warm rolls and sprinkle with chopped pistachios.
