Sun dried San Marzano-pomodori essiccati al sole.
1. Pick fully ripe Marzano
2.Wipe them
3. Cut lengthwise
4. Place skin side down on a wire mesh table
5. Salt them (this will extract all the water from the tomatoes)
6. Place in full sun for a couple of hours to allow the salt to melt
7. Then flip tomatoes and allow the water to drain out
8. Flip tomatoes back on the skin side and allow to fully dry out
9. At night, place a cotton cloth over tomatoes to protect from morning dew or shelter them from moisture

Rustic variety, indeterminate, “basket” shaped fruit characterized by green color on the top of the shoulder even when fully ripe. The flesh is soft, firm, no water, few seeds and a thin peel. 1,2,3,4,5-how many times do you tie your tomatoes? We generally tie up indeterminate 4-5 times with aluminum wire (fiero filato) to give them maximum support.
