Lemon Bars
Ingredients:
- 1 cup all-purpose flour
- 1/2 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 cup granulated sugar
- 2 tablespoons all-purpose flour
- 1/4 cup lemon juice
- Zest of 1 lemon
- Powdered sugar, for dusting
Directions:
1. Preheat your oven to 350°F (180°C) and grease a 9x9 inch baking pan.
2. Make the Crust: In a bowl, mix together 1 cup flour, powdered sugar, and softened butter until crumbly. Press the mixture into the bottom of the prepared baking pan.
3. Bake the crust for 15-20 minutes, or until lightly golden.
4. Make the Filling: In a separate bowl, beat eggs, granulated sugar, 2 tablespoons flour, lemon juice, and lemon zest until well combined.
5. Pour the filling over the baked crust and return to the oven for another 20-25 minutes, or until set.
6. Cool the bars completely in the pan before cutting into squares.
7. Dust with powdered sugar before serving.
