Peking Duck on a Kamado
New to all of this and am on a quest to perfect it by cooking one a week. This was #2 and I‘m almost there.
Pumped it up with a car paddle board pump, hot water bath, followed by a maltose and plum vinegar lacquer. Rubbed the cavity with a fermented tofu and ginger oyster sauce situation and aged this one for 3 days cause I had time. It was great and the family scarfed it up.
