Cottage Cheese & Banana Filled Pancakes
Servings: 4-6 pancakes
Ingredients
For the Pancake Batter:
2 large eggs
30 g natural yogurt (or sour cream)
30 g sugar
45 g all-purpose flour
0.5 tsp baking powder
A pinch of salt
For the Filling:
150 g cottage cheese
1 tbsp sugar
1 tsp vanilla sugar
1 tbsp yogurt or sour cream
1 ripe banana, mashed
Instructions
Prepare the Filling: In a bowl, combine the cottage cheese, sugar, vanilla sugar, yogurt (or sour cream), and the mashed banana. Mix until smooth and set aside.
Make the Batter:
In a mixing bowl, whisk together the eggs and sugar until light and frothy.
Add the yogurt (or sour cream) and mix until smooth.
Sift in the flour, baking powder, and salt, stirring just until combined.
Cook the Pancakes:
Preheat a non-stick skillet over medium heat and lightly grease with oil or butter.
Pour a small amount of batter into the pan to form a medium-sized pancake.
Cook for about 1-2 minutes, until bubbles form on the surface, then flip and cook the other side until golden. Repeat with remaining batter.
Assemble:
Place a spoonful of the cottage cheese and banana filling onto each pancake and fold or roll them as desired.
Serve: Enjoy the pancakes warm, with a drizzle of honey or maple syrup if desired!
