How to make it:

1️⃣ Prepare the crust

Crush the Oreos into fine crumbs.

Mix with melted butter until the texture looks like wet sand.

Press the mixture firmly into the bottom of a 9-inch springform pan.

Refrigerate for 20 minutes until firm.

2️⃣ Make the mango cheesecake filling

In a large bowl, beat the cream cheese, powdered sugar, and vanilla until smooth and creamy.

Add the mango puree and mix well.

In another bowl, whip the heavy cream until soft peaks form.

1 cup flour (125g)

½ cup sugar (100g)

2 eggs

½ cup milk (120ml)

¼ cup oil or melted butter (60ml)

1 tsp vanilla

1½ tsp baking powder

Pinch of salt

Optional: 2–3 tbsp sprinkles

Filling Options:

1. Buttercream: ½ cup butter, 1 cup powdered sugar, 1 tsp vanilla, 1–2 tbsp milk

2. Whipped Cream: 1 cup cold cream, 2 tbsp sugar, ½ tsp vanilla

Instructions:

1. Preheat to 170°C (340°F), grease a rectangle/square pan.

2. Beat eggs and sugar, add oil, milk, vanilla.

3. Mix in flour, baking powder, salt. Add sprinkles if using.

4. Bake 20–25 mins, cool, slice horizontally.

1 lb (450g) shrimp, peeled and deveined
1 tbsp vegetable oil
1 onion, finely chopped
3 cloves garlic, minced
1-inch piece of ginger, minced
1 tbsp red curry paste
1 can (14 oz) coconut milk
3 cups chicken or vegetable broth
1 tbsp fish sauce
Juice of 2 limes
1 tsp brown sugar
1 cup baby spinach
1 red bell pepper, sliced
Fresh basil or cilantro, for garnish
Lime wedges, for serving
Salt and black pepper, to taste

👩‍🍳 Directions:

1️⃣ Sauté Aromatics: Heat the vegetable oil in a large pot over medium heat. Add the onion, garlic, and ginger. Sauté for about 3 minutes until the onion softens and the mixture is fragrant.
