Chicken breast recipe | Easy chicken breast recipe | Break the spice chicken breast

Today I'm sharing my best chicken breast recipe. This recipe makes the most tender and juicy chicken breasts! This one pot chicken recipe is perfect for weeknight as well as a meal prep option. You can also switch the chicken breast for chicken thighs or any other part. Give this a shot and it's surely going to turn into your favourite quick dinner recipe!

INGREDIENTS:
450g/1 lb chicken breast (boneless, skinless)
Olive oil
— marinade —
5 tbsp yogurt
1 tsp cumin powder
1 tsp red chilli powder
1/2 tsp black pepper
1/4 tsp cinnamon powder
1 tbsp dried oregano
1/2 tsp salt
1 tbsp tomato paste
1 tbsp grated garlic

METHOD:
1. First we need to get all the chicken breasts into uniform thickness. You can do this by pounding with a meat mallet/rolling pin or slicing them in half
2. Mix all the marinade ingredients, taste and adjust seasoning as per your preference. Coat the chicken breasts well and let it marinate for at least 30 mins. For best results, marinate overnight in the refrigerator
3. In a wide pan/skillet, heat some olive oil on medium flame
4. When the oil is hot, add the chicken breasts without overcrowding the pan
5. Fry for 3 mins. If the fillets are thicker, fry for 4 mins
6. Flip and fry the other side for 2 minutes. By now the chicken is almost done
7. Cover and cook on low for 1 minute. Switch off the flame and rest for 5 mins. Resting allows the chicken to cool down and reabsorb its juices
8. Serve it with a refreshing mint yogurt dip (3 tbsp yogurt, 1 garlic minced, 1 tsp mint and salt to taste) or with my quinoa salad. You can also use these chicken breasts in sandwiches/wraps. Enjoy!

SUBSTITUTES:
• No dried oregano?
Use any dried herb of your choice

• Can chicken thighs or bone-in chicken be used?
Yes. Cooking time will vary depending on the cut of meat

• No yogurt?
Curd can also be used

• No olive oil?
Butter or cooking oil can be used

TIPS:
• Don't overcook the chicken breast or they will turn rubbery
• This is great for meal prep. You can either cook and store or store the marinated chicken in the freezer

Do you love egg sandwiches? I sure do! Today I’m sharing 3 delicious and easy egg sandwiches - spicy egg sandwich, bacon egg sandwich and Caprese egg sandwich. These egg sandwich recipes can be had for breakfast, brunch or snack. They are filling, easy to make and super tasty!

RECIPE
SANDWICH SAUCE:
1 tbsp mayonnaise
1 tbsp ketchup
1 tsp hot sauce

SPICY SCRAMBLED EGG SANDWICH
INGREDIENTS (1 sandwich)
2 eggs
2 slices bread
1 small onion
2 fresh chillies (green/red)
Coriander/cilantro leaves
1/4 tsp turmeric powder
1/2 tsp chilli powder
1/2 tsp salt
Cheddar cheese (as needed)
Butter
Cooking oil

PROCESS:
1. Heat 1 tbsp neutral oil and sauté onions until golden
2. Whisk eggs with turmeric, chilli powder and salt. Add the egg mixture to sautéed onions and scramble.
3. Switch off the flame when eggs set and add the chillies and coriander/cilantro. Adding chillies at the end keeps it fresh and spicy
4. Evenly spread sandwich sauce over 1 slice
5. Add scrambled eggs, cheddar cheese and place another slice over it
6. Grill the sandwich with butter until golden brown on both sides

CRISPY BACON EGG SANDWICH
INGREDIENTS (1 sandwich)
2 eggs
2 slices bread
1 medium onion
2 strips bacon (pork/turkey)
Pickled jalapeños/gherkins
Cheddar cheese (as needed)
Butter

PROCESS:
1. Dice 2 strips of bacon (pork/turkey) and add it to a hot pan without oil. Let the bacon release its fat and fry until crisp. Set aside excess bacon fat
2. Thinly slice the onion and fry it in some bacon fat until browned
3. Make soft scrambled eggs in the same pan without adding salt. The bacon is salty enough so there is no need to add more salt
4. Evenly spread sandwich sauce over a slice of bread. Layer with bacon, scrambled eggs, browned onions, pickled jalapeños/gherkins and cheddar cheese. Cover with another slice of bread
5. Grill the sandwich with butter on medium/low flame until golden on both sides

CAPRESE EGG SANDWICH
INGREDIENTS (1 sandwich)
2 eggs
2 slices bread
1 ripe tomato
Few basil leaves
Fresh/aged mozzarella (as needed)
Olive oil

PROCESS:
1. Cut a ripe tomato into 1/2 cm thick slices and sprinkle some salt over them. This boosts the tomato flavour
2. Thinly slice a few fresh basil leaves. Basil pesto can also be used instead of basil leaves
3. Slice fresh mozzarella or grate aged mozzarella cheese
4. Fry the tomato slices in olive oil until lightly charred on both sides
5. Scramble eggs with olive oil in the same pan
6. Layer the bread with scrambled eggs, fried tomatoes, basil leaves and mozzarella cheese
7. Grill the sandwich with olive oil until golden brown on both sides

SUBSTITUTES:
• No cheddar/mozzarella cheese?
Replace with a cheese of your choice

• Don’t like cilantro/coriander?
Skip it

• No turmeric powder?
Skip it

• No pickled jalapeños/gherkins?
Substitute with any pickled vegetables

TIPS:
• Cast iron pans work the best to get a brown crust on sandwiches
• These sandwiches taste best when fresh. It can get soggy if packed or stored
• Large batch of sandwich sauce can be prepared and stored in the refrigerator

Spicy Spaghetti Pasta Recipe! Easy and Delicious Meal!

Today I'm sharing my current favourite spaghetti pasta recipe - chilli oil pasta! This spicy pasta is so delicious, I had to stop myself from eating the entire pan! It's super quick, cheap but tastes incredible. Try out this delicious pasta recipe and I'm sure you'll fall in love with it too!

RECIPE (2 servings)
INGREDIENTS:
2 servings pasta (approx. 4 oz/120 g)
1 medium onion
2 garlic cloves
1 tsp red chilli flakes (add more or less as needed)
3 tbsp olive oil
1 tsp dried oregano
Water as needed
1 tbsp salt
1.2 ltr/0.4 gallon water
Optional: fresh parsley and cheese for garnish

METHOD:
1. Set a pot of water to boil. Add 1 tbsp salt and 1 tsp oregano to infuse into the water
2. While the water is boiling, finely chop the onion and garlic
3. The water must be boiling by now. Add the pasta and let it cook until it's al dente (almost done)
4. While the pasta is cooking, lets make the sauce. Set a pan on medium low heat and add 3 tbsp olive oil (preferably extra virgin olive oil)
5. Add the minced onions and fry until they turn golden. Stir frequently to avoid burning
6. Once the onions are golden, add the minced garlic and fry for 30 seconds
7. Next add the chilli flakes and fry for 30 seconds. Set aside 2 tsp of the chilli onion crisp to garnish the pasta
8. The pasta must be al dente by now. If not, take the sauce off the flame while the pasta is being cooked
9. Once the pasta is almost cooked, add it to the pan along with 1/2 cup of pasta water
10. Stir on medium flame until the sauce is thick, glossy and coats the pasta. The salt should be sufficient as pasta water is salted. If not add some salt while stirring the pasta. Remember that cheese will also be salty so don't overdo it
11. Serve pasta with reserved chilli onion crisp, fresh parsley and grated cheese (used parmesan)

SUBSTITUTES:
• No oregano?
Use mixed herbs, thyme, tarragon or Italian seasoning

• No chilli flakes?
Skip it or add 1-2 dried red chillies

• No olive oil?
Butter also works. If using salted butter, add less salt to the pasta water

TIPS:
• The salt should be sufficient as pasta water is salted. If not add some salt while stirring the pasta. Remember that cheese will also be salty so don't overdo it
• Stir onions frequently so they don't burn and taste bitter
• Infusing pasta water with oregano/herbs gives a delicious flavour to this pasta so don't skip it
